Esther Choi of Mokbar and Ms. Yoo in NYC is in her home kitchen demonstrating how to make fresh, flavorful tofu. Esther reveals the only ingredient needed: any dried beans you have on hand. Her recipe features the classic soybean, which she soaks, blends, boils, and turns into a soybean paste, then presses into firm blocks. Esther serves her fresh tofu with a side of kimchi salad and a sprinkle of sesame seeds.

I recall making homemade tofu but with the second and third step switchover, we used to strain the soybean smoothie before boiling it, that way the impurities wasn't as much mixed with the soy milk and when boiling it wouldn't foam as much. Also the strained bean pulp we give it an additional pass at the blender with additional water to extract the remaining protein available and make some extra soy milk from the batch.

@@Akiikage It really doesn't seem that hard, and she says in the video that the soybean flavor is way more present when homemade, not to mention being able to use the leftover soy in soup or stew which she also said is her favorite part about making it at home. Did you two even watch the video?

Simple meal at my asian household. Cut up some tofu, throw in hot pan with oil and some salt, eat over rice with hot sauce. Tofu is delicious fried.

Sounds like the pichi jjigae (I hope I'm saying it right on the former) would go quite well with hominy and/or chuño (freeze dried tubers like freeze dried potatoes) to the dish in place of rice, maybe alongside millet for quinoa

THANK YOU for leaving a very clear and comprehensive recipe for making tofu!!! Now perhaps mine won't turn to mush again! The nigari ratio and temp. for the soymilk "after the boil".....huge difference! Thank you! You should teach and get paid for it! I am determined to master home-made tofu as I'm tired of being beholden to the finicky buyers at Costco.....

I'm looking forward to trying this recipe with soybeans. Looks delicious. Do you have a video on how to make tofu with other beans? I tried it today following these steps and it was a disaster. When I researched how to make it with other beans, there was a recipe with completely different directions. Apparent not ALL beans act like soybeans in terms of curdling with the nigari. Another recipe that I saw said that you have to cook the bean "milk" until it's super thick and then cool it in a loaf pan.

If following this prep, double check your MgCl amount. I made this exactly as written and the bitter chemical flavor of the nigari was absolutely overpowering from the 1 TB (in 2 TB water) used. Everything else looked and acted like it should, based on the video (and was dead simple!), but the final product was completely inedible (even after an extended soak in cold water - 60 rather than 30 min. Further, other recipes I ref'd use a much smaller amount of powdered nigari (and maybe there is a difference between like flake nigari and powdered nigari? Could be...). In my second attempt I used 1 tsp in 1/4 c water, mixing, and then adding 2 TB of that mix - then, I checked the curding and added another TB of the mixture. After 10-15 min sitting I tested for flavor before pouring into the press, and it tasted pretty much right. Pressing it now and VERY excited to see if mine turns out as good as Esther's!

That's really helpful, thanks! I have a question. When you bring the milk upto 85 and add the nigari, are we meant to turn the stove off at that point for the 15 minute rest time, or is the milk meant to stay at that 85 for the whole 15 minutes?

I tried making tofu with black eyed peas and it failed spectacularly. Twice. Are black eyed peas suitable for tofu at all? When I tried soy bean tofu turned out fine

Question about the process, I think I put too much magnesium chloride in last time I made it. The tofu was quite bitter. Do you reccomend half a tablespoon in the video?

So, with the magnesium, does most of it come out in the soy whey? If not, will the tofu have a laxative effect? Or is it de-activated by being absorbed by the proteins in the milk?

Plug the term "kongbiji jjigae recipe" into your favorite search engine, and find the one that you think fits your tastes (and what's in your fridge/pantry!). I happen to really like www.maangchi.com/recipe/kongbiji-jjigae, but I like making fresh soup stock. Note that most of the recipes I've seen do not have the soy milk extraction step that is necessary for tofu production, so it's possible Esther is thinking of something different (she calls it biji jjigae), but I'm fairly certain this is what she's referring to.

I’m new at making soy milk and tofu. Love your video best so far. I have a few questions. 1. Some videos I’ve watched say to skim the foam off because it’s bitter. Is this true? 2. Between cooking the beans first, cooking the blended soybean mixture, or straining then cooking the soy milk. Is either way okay? 3. How much nigari to what amount of soy milk?

1. I don't remove the foam and my soymilk doesn't taste bitter. 2. I've seen cooks do both ways and it still works out.

Is there a substitute for Magnesium Chloride I can use? I tried googling (RIP I know) and I got Magnesium Sulfate (or Epson salt) which can be consumed in small doses if I'm correct. Any other suggestions?

Anything of these are possible; Magnesium dichloride, Calcium chloride, Calcium sulfate, Magnesium sulfate, Calcium carbonate, Acetic acid (vinegar), citric acid, Glucono delta-lactone, etc.. Different coagulant give slightly different texture and taste.

When you boil the tofu and then you say "cover it and let it sit for a few minutes", do you mean on the heat or without the heat?

She makes it look so easy...but after adding the coagulant, I get liquid separating and a grainy sludge with very few small curds. I don't get the fluffy curds she gets.

Nigari (magnesium chloride) is the coagulant powder. The chili flakes are called gochugaru.
