Been in the group for all of two days. I’m appalled by this. Have watched and enjoyed your videos for the last year since I became vegan, learned a lot and inspired me to experiment a lot. Finally hit the subscribe and bell button. Was looking forward to learning stuff from that group but I’d rather not if it’s run by people like this. And it looks like there’s a mass exodus happening! I brined seitan for 9 days and baked it in a Dutch oven for 3 hours coated in oil. It was a lovely sandwich “meat”

@@SauceStache it’s pretty simple. I flavor my seitan with herbs and spices, and wrap the dough in a log form with cheese cloth and butcher’s twine. I boil that for a couple of hours, let it rest, and then brine it. I bake it in a Dutch oven at 275° for three hours, covered liberally with oil. I love your channel!!! @@SimplySteffany perhaps give this technique a try. Reconstitute dried mushrooms, purée them into a paste. The amount of water I use should just cover the mushrooms in the blender. I also cut back on the amount of vital wheat gluten by using some flax meal. Make sure to add oil and molasses to your dough, that’s important. Have fun 💚🌱

Personally I put my seitan in a saucepan when I'm adding the seasonings. The gluten becomes stretchier with the heat so you can add all the spices and if it's too hard to incorporate it well, I also add chickpea flour

Not sure if you're going to end up reading this, but might as well. If you want your seitan to color beautifully, beetroot powder isn't the way to go, the colour disappears in the cooking process. Use grated/blended raw beetroot instead. Using cooked also doesn't work- you end up losing colour aswell.

Hugs Mark, that lady was way out of line. You were doing her a favour and I still can't work out what she was upset about. So many joined the group after your comment (like me) and so many defended you and got booted (like me, but I was in the process of leaving anyway). Hopefully we could ask Oncle Hu if he had any more recipes and if he could share them on 'The Washed Flour and Other Seitan Recipes and Methods'. Nicer name and MUCH nicer admins. Honestly, at the moment that (super random) post has 627 comments, and as far as I can see every single comment made in there is being just as confused as you are, being angry and demanding she apologise to you because this is so bizarre and unnecessary, or just generally in support of you. Just so you know! You're actually very loved in there :) Don't spend too much time worrying about what happened... It's just literally 1 or 2 women who were already like this and tons of people leaving because this was the last straw. Hope you're doing well! Can't wait for more videos!

I’ve made vegan pastrami several times from a cookbook called Vegan Diner (which has been out for several years--sorry Oncle Hu, you weren’t the first). My husband and I aren’t vegans but we once lasted 6 months eating vegan and my husband (who has been eating a high meat protein/ low-carb diet for over a year and lost over 40 lbs) still talks about the reubens (non-vegan) I’ve made with the vegan pastrami from that book. My husband looooves pastrami. When we get sandwiches from a place known for its roast beef sandwiches he almost always gets the pastrami. I’m sure this is also great and I’m going to give it a go. Not a vegan but I like the science of this stuff and I enjoy some vegan foods for the sake of them.

I am not a baker. The fact that you roll with your mistakes as you go, add more water or color and say that you didn't get the color you wanted in the end result helps someone like me. Anyone who isn’t part of that Facebook group he gave credit to: read the comments here before joining!!! The admin was super rude about him using a recipe from the group and has been banning people for defending him.

I'm so sorry about the way the admins of the WTF group responded to you praising them. I saw the post and was baffled by that behavior. Genuinely wondering if she is having some sort of neuroses or breakdown. I know it's difficult to admit when you made a mistake, but the original post seems to be a genuine mistake/ misunderstanding which she has then turned into a big old s***-storm for no reason. Not a normal reaction from an even partly balanced individual at all. Very odd.

Every time you upload, I end up ordering from Modernist Pantry or heading to the grocer to get an exciting new ingredient like lactic acid or nutritional yeast. My vegan cooking world has exploded with flavor and the chance to eat “meaty” foods and cheeses I thought were gone forever. Ignore the online vitriol. Just unstable I guess. I guarantee every single person that requested membership yes because of you will be leaving. Keep making these amazing videos. I've been making wtf method of seitan since this Spring (though I did make it in about '95 with results that tasted like dog food, ha). I'm SO sorry that the admin of Mangled Brains did what she did. She has quite the ego. Here is the method I used for pastrami (copied from the group): Vegan pastrami! I think I'm going to marinate it! I just make a huge (1600 grams, over 3 lbs) dough ball of all purpose flour with salt. Washed it a few hours later, let it rest while I gathered pastrami seasonings. I knotted it up, then I steamed it in soy sauce, Worcestershire, smoked salt, mesquite liquid smoke, brown sugar and water, adding up to 2 cups of water in my Instapot. Then I fried it in my skillet, and then put what was left of the 2 cups and simmered. Sliced thinly with my food slicer after it cooled. Then I marinated it with soy sauce, vegan Pampa brand Worcestershire sauce (cheap and good), brown sugar, smiled hickory salt, mesquite liquid smoke, a little red yeast rice powder, black pepper, and olive oil. Based on the recipe from the Seitan and Beyond cookbook. I mixed in the red food coloring after adding most of the water to the dough.

hey, love your videos! just so you know the admin power trip in the WTF group has completely fractured the group now - there's like 500 protesting comments on the mod's weird hostile post about you, and people are getting booted and leaving in droves! congrats (not being ironic) on accidentally exposing one of the most unnecessarily nasty communities I've ever been a member of haha, and thank you for the videos
