I started making yogurt in the seventies with nothing more than a stainless steel pot and an oven. I scald the whole milk,let it cool some add the previously made yogurt about a cup per gallon of milk, stir it in, place it in the oven with the light on, leaving it until it's done (usually overnight),strain and consume. The way I use for baking. Very simple.

Yep, you can even make it on the counter wrapped in a towel.

Good to know I can use the speedi for making my yogurt but also to turn this into sour cream: To 16 oz. of the drained yogurt add one tablespoon of lemon juice. Then refrigerate overnight. It tastes like the store bought also I use a clean sour cream container to identify. Dinner guests don’t know the difference.

If it makes you feel any better Louise, the UK version of the speedi doesn't have the yoghurt function OR the sous vide one. Crazy. That yoghurt looks amazing though, if I wanted to make a fruit yoghurt, such as strawberry, would you just add that in after the final product has cooled?
@TheSaltedPepper Жыл бұрын
You might be able to use the proof function to make yogurt in it! Yes, I would add the fruit after the yogurt has been cooled and strained if you are straining it.

What about using proofing for yogurt?
@TheSaltedPepper Жыл бұрын
That should work, but the heat source is at the top and it only goes to 95F. I wasn't sure if it would provide enough warmth down to the bottom that's why I used sous vide. However, since you can make yogurt on the counter in a warm area, it really should work fine.

No, you can skip the boil phase if you have ultra pasteurized.

Help please! For the past 8 months I have been the happy owner of a Ninja Foodie XL Pressure Cooker Steam Fryer with Smart Lid. I used this appliance multiple times daily, looking to Louise for much of my inspiration and direction. It has suddenly stopped working 😢. The help line looked at what was happening via a video link and said I had a year warranty, so they could send a new base at no cost to me, but that this model is being discontinued and it would take 2-4 weeks to receive the new base. The alternative they offered is to purchase a new unit from the SharkNinja website at a 70% discount. That led me to this video of the Speedi. Thoughts, anyone? Should I just wait the four weeks for the new base? I have been very happy with the Foodi up until now.

Can you use store bought plain whole milk yogurt as a starter?
@TheSaltedPepper4 ай бұрын
yes, as long as it has active live cultures which most do.
@catherine8770 Жыл бұрын
Thank you! I was wondering about this. Can't wait to try. Can you recommend a yogurt for a starter culture?
@TheSaltedPepper Жыл бұрын
I use plain Greek yogurt, whatever is on sale and in the smallest container.
@kerihouston133611 ай бұрын
Actually, the reason for heating the milk before making yogurt is to deactivate a protein enzyme that prohibits the yogurt from forming.

any suggestions on how to make yogurt with the ninja foodi mini. No proofing, No Yogurt, No Sous vide No dehydration 😞
@WaynoGur Жыл бұрын
A couple of questions. I have the ninja foodie with a yogurt function. Could you please show or tell us how to adjust making yogurt in that? Also what yogurt should I buy at the store for the starter since I have never made yogurt? I make my own pickles and Saurkraut.
@TheSaltedPepper Жыл бұрын
You add the milk and hit the yogurt function. It will boil and then let the milk cool down. When the milk is cool enough, it will tell you to add the starter. Add in the yogurt starter and hit start. Then it will go to the ferment time. Any plain yogurt with active cultures will work.

Hi Louise. Could the quicker "boil cycle" and beginning of solidifying be because you used about a quart less milk than the other times?

I make my yogurt in my Instapot. I have done it several ways and I have strained it before. It seems that I never get a curd-like texture. Mine always comes out like a smooth texture and is forms peaks almost like runny icing. Can you tell me why and what I can do to get the texture you got in this video. I have boiled the milk before and have used ultra filtered milk. Thank you so much for your help and great video.

Some models of ninja speedi do not have sous vide or proof what can we do to make yogurt
@TheSaltedPepper Жыл бұрын
You can try dehydrate like I did on the Ninja Foodi models before they had the yogurt function. I would lower the temp to about 160-170F since it's smaller. Here are the details: thesaltedpepper.com/homemade-yogurt-in-the-ninja-foodi/

I don’t like Greek Yogurt. I prefer the yogurt to have some of the whey in it and I like some type of sweetener in it too. When I make it I add some sweetener plus vanilla. Then when I’m ready to eat it I add Grape Nuts or some fruit.
@KamenDokov Жыл бұрын
Proof function should work for yoghurt also.
@TheSaltedPepper Жыл бұрын
There was some reason why I didn't use that function, but I can't remember now why it was. I think because it's so much lower of a temp and I thought sous vide would work better. Proof should work though.

I don’t think I can even buy unpasteurised milk in the UK, it’s against the law I believe, if your a farmer and have a herd of cows then someone like that would have access but you cannot buy it in the shops here at all.
@TheSaltedPepper Жыл бұрын
Our milk is pasteurized, what this video is talking about is ultra pasteurized milk. Regular pasteurized milk needs to be heated first and ultra pasteurized doesn’t. Hope that clears everything up. 😄

Then it would be the Ninja Foodi. LOL Have you tried steaming the chicken? If they are dry and hard, you heat is too high and you are cooking them too long. So, either switch over to steaming or lower the temperature and timing on a dry cooking function.
