If your using a whole pineapple you can use the pineapple peel to make a different fermented drink: Tepache. Cover the peel with water, add sugar, and leave to ferment for a few days or up to a week. The water will ferment with the naturally occurring bacteria in the pineapple peel. Delicious!

Start out by introducing water kefir slowly. Only 1/2 cup per day and increase gradually. You will probably feel the effects of it quickly if you don't eat or drink fermented foods on a regular basis.

I bought the Florida Sun Keifer too,I make it and we love it ,I let mine set for 3 days and let the pressure off once a day on that 3rd day I bottle mine up put different things in mine too. I love lemon 🍋 and lime, and apple 🍏 I love pineapple 🍍 and I Bergamot juice you can buy a bottle of that off Amazon for $15 dollars.Mine are so full bubbles when I pour off I just add what ever flavor and bottle and refrigerate...But I let my Keifer grains grow and not pull out ,well I pulled out enough to give back to my daughter in-law to get her jars a gal each going again. She killed hers off somehow. But I pretty much let mine stay in the jar it seems to me it works fermenting the water faster and I don't have to leave it out for another 2 or 3 days after I flavor it with my fruit..We love our Keifer water in Virginia.. I saw you first video on it and I had to try it. Thank you so much..

Insightful analysis Ms. Tipper! I’m interested in fermentation myself but I’m having a hard time getting my family thrilled with it. This might work because we do lots of spearmint and other herbal teas. I’m a kitchen science geek and my kitchen is my laboratory. From growing gourmet mushrooms to all kinds of food preservation-I have to learn how to do it, show the family and then, maybe, they get enthused. They enjoyed eating the mushrooms but I could never get them involved in cultivation.

My mother made this... we called it yeast water, but it did have those pearly beads. Mind you, that was in the 1960ies!! She sliced lemons into the water and we liked it. Actually, she and I were the only ones who drank it, my 4 brothers and dad did not like it and never touched it. So, my mother ended up calling it "Ladie's water". I grew up in Switzerland, and we used homeopathic medicine primarily. Thank you and God bless you and your lovely family!

When talked about what worked more bubbly, it seems "acidity" or "alkaline" seems to be the dividing factor. I absolutely love this! I want to work with the ginger lemon and vanilla bean, Im sure the pineapple will be a hit as well. This is my first introduction to this. And the depth to how your synthesizing and break down of your experience with the process is very appreciated. Going to give a go, thank you. I will share this for those that sample.

As long as your metal is stainless steel it's ok, it won't hurt your grains. NEVER USE SILICON I made that mistake 10 years ago when I started making milk kefir and the silicon spatula I used almost killed all my grains. They kept getting smaller and smaller until I found out why as soon as I started using a wooden spoon, they began to grow. I really enjoyed your video thank you.

Tipper, excellent, informative video! I've been making milk/cream kefir for years. The grains are different of course, but the process is similar. My typical breakfast is a glass of kefir with a handful of blueberries and banana slices. It's just delicious! Just as you mentioned, I've heard that kefir grains don't like touching metal. I personally think it's just an old wives' tale, but others talk about a bad "molecular reaction" between metal and kefir grains. I've never had an issue, but the grains come in contact with metal only when I'm draining them off and that's just for a few seconds.
