Just got into competition cooking with a few friends. Started off small and we’re able to win 1st in brisket at the UH cook off but are looking to get into more sanctioned events. This video was amazing for a guy like me learning how to perfect chicken halves. Thank you! Was already objective but love the glaze technique so a brush won’t harm presentation. And congrats on your RGC at the HLSR. Looking forward to any more competition videos you might post.

(My only wish is that I could be there to taste the end product!! :))) One question: I noticed you did not sprinkle the rub on the sides of the ribs (on camera, anyway). Is there a reason?

Thanks, I appreciate that Super Bear! You are correct, I don't bother to season the 4 sides. I just feel that those sides don't play a role in what I put in the box for the taste judges. It saves me some products in the long run.

Wow. What a cook. You talked about using runs that complement each other. Are there any rules or guidelines for matching them up or is it just trial and error ?

Great question Kev. I don't think they are any hard and fast rules. I like the idea of one rub that's hearty, granular and salty, a second that has lots of herbs and very little salt and lastly, one that has some sweet and some heat. It's definitely trial and error until you find the right balance.

Do you use the same sauce on all of your proteins? Or, do you use different sauces on the different meats based on the seasonings you used? I'd think some sauces go better with other rubbs, because you used different seasoning on each one.
