This looks like a very good recipe. I have made chicken enchiladas with a green sauce. It’s very delicious. I’ll give your recipe a try. I think my son will enjoy it more than the green sauce version I make. I’ve been praying for you, Mama Sue. Our young son, Ryan had cancer during the same time you did. He too gets tired more than usual, but is doing very well! 🙏 Fatigue is definitely part of the the process. Wishing you love and peace, Mama Sue. You still remind me so much of my dearly missed grandmother. 🌷💕

Sister you look better every day !!! I am so thankful for you and your recipe's. They are so easy and delicious. I have been battling liver disease for 3 years and if I didn't have the lord in my life I don't think I would be alive today. And to let you know I scheduled my mammogram 😊.I am a year late on it and don't know if I would have had it done if it wasn't for you. Stay sweet, blessed and BEAUTIFUL 🌺🌺🌺

I love Mexican food, too, and these look yummy! You could top them with a little sour cream and/or guacamole. I like to serve things like this with shredded lettuce and diced fresh tomatoes.
