I took a cooking class and he processed the onion 1st and squeezed all the juice out of it in a tea towel, then processed it with ground lamb, garlic, dried rosemary & marjoram, S&P to a paste. We pressed the meat into loaf pan, baked it 45-60 min in a water bath (like cooking a custard) @ 350 F, then drain off the fat. Place on a cooling rack with a weight directly on top of the meat (cover a brick with foil) and let sit for 15-20 min. Then we sliced it and made gyros with the pita and tzatziki we made in the class. (It didn't have to go in fridge) Getting rid of that onion juice and the fat from the meat helps it not to crumble. Btw, try the Sam's Choice Greek Style Pita (White) from Walmart--it's the soft type of pita that's really good.

I always spray my foil whenever I cover anything with cheese on top, to bake it. Cheese won't stick to the foil.
