Great cook and video. Thanks for sharing.. I also use Heath Riles Mango Habinero. But I mix one to one with 16 mesh pepper. And, like you, I low and slow at 225. The briskets will hit its stall around 8 to 9 hours in. Once it breaks thru, I reach 175 to 180. Around 10 hours. That's when I wrap. I also use my trimmings to make tallow. The soft fat. The extra meat I use in chili or making sausage. Dont throw away the hard, nasty fat. Use it to boil and make beef broth. Refrigerate it, then skim the fat off the top. When I wrap, I use the smoked tallow. I usually hit 201 to 205 around 14 hours in. I then have a warmer oven. I set at 150. I let it rest at 150 for 6 to 8 hours. And wow, the juiciest, most tender brisket. Me and you have a lot of similarities. Lol, this type of cook takes a lot of patience. Lol

Sup Karl. Somethings to think about first. Offset smoker, upright smoker, Pellet smoker, grill smoker combos. Lots to choose from based on your budget and ideas for cooking. I really like the versatility of the inexpensive Weber Kettle. The Weber Smokey Mountain (WSM) is pretty affordable and effective for long smokes. If you're looking for an offset, expect to spend more because you DO NOT want to buy a cheap one. Look around on Marketplace for used offsets. I love the convenience of Pellet Grills but again expect to pay for a nice unit. Good to hear that you're going to start smoking. Looking forward to some videos. Happy new year.

Did you weigh it when finished trimming? 20 lbs. down to 12 lbs. I like to put my meat to cool down in? My Igloo cooler 🤣🤣It give it some thing to do. While not using for beer, and things 👍👍 It holds heat, like it does ice.. A brisket takes about 14 hours to cool down > Ribs and things 6 to 10 hours to cool down

unfortunately, it was over cooked, you can see the meat breaking up. i'm sure the flavor was there. Juicyness about 6/10, smoke ring 4/10, bark 7/10. Good effort overall, but 18 hrs plus on a cook, it tends to get over done.
