Congrats. You can flatten and sharpen a piece of pipe to do any cooking job. The question is balance and length, something you have a personal preference for, or will in time adjust to that of the knife. Aside from balance, go for a knife that is easy to sharpen. As long as you know what you are looking for, then you can find your perfect knife for less than 10 dollars.
