In the Site Colum settings, you can select Display the entire path to the term in the field. You will also need to format the colum separately, i.e. change the dispaly format in the List itself to Term plus parents. Finally, you change the appearance using JSON.

In the list, can you sort or group based on the category, using this managed metadata?

No; to filter this column by category (e.g. 'Technology'), you would have to select all of the items in that category.
