I agreed at first too, but after watching the seasons again I actually don't think they did that bad on the other 2 seasons. I don't belive he was weaker in season 3, I think his mind was thinking more about the safety of his kid and his enemies got more powerful. Moff Gideon had some more mechanical parts to him which did make him harder to fight. Add the Beskar armor and his pretty dangerous. I know it's a hot take but I truly believe that the madolorian is one of the best story lines out there. "ONE" btw, one of the best.
