Chef Rose of Caro and Marie, Cebu

This is my version of the popular Peach Mango Pie. Definitely not the same as the original but decent enough for me. Remember to chill the filling before using otherwise you will have difficulty closing the pie. Filled pies can be frozen and fried from the freezer to the frying pan. Try to play around with other fillings like buko, pineapple, apple, etc.

Sure you can but shortening produces a flakier crust.

Hi chef.. can we put the tapioca with water glaze and put back in the feeezer?? I’m thinking of selling frozen mango peach pie.. but not fried .. I like the idea of putting the tapioca with water to prevent the oil going inside the pie

Just made this and it’s the perfect sweetness for me. I used butter instead of shortening. Can I bake this chef? I tried frying it but the filling was still cold.

Yes you can but it is more delicious if fried.

Yes you can use shortening and butter. You can use store bought spring roll wrapper but you have to consume immediately because it becomes soggy in less than 10 minutes.

Yes you can. Just take them out when you are ready to use them again. I do not refrigerate mine though.

Baking will not produce the same kind of crust as when you fry it. It does not remain crispy for a long time because the filling is very moist.

I am not sure since I formulated this recipe for frying BUT I believe you can bake it too. Texture and flavor will not be the same though.

Pwede but cassava or tapioca starch is a better binder because hindi siya nagtutubig.

It does not stay crispy for a long time. Depends on how well you fry it and store it - about 1 hour. Frozen for 1 month.
