I could really see the infused Rum shine in a East India Negroni, giving you a flavour profile almost reminiscent of black forest cherry tart by combining the rasiny stonefruit-Notes of the Sherry and the bitter-sweet citrus aroma of Campari with the darkness and warmth of Rum and chocolate notes.

I tried the coconut rum recipe with overproof rum today and it worked out wonderfully. I wondered what to do with the coconut flakes and the fat not wanting to throw it away. And while your idea with the fat covered ice cubes is great it was just too much fat for too many ice cubes. So I made brownies with it instead. Turned out coconut flakes dipped in rum really make the brownies full of rum flavour. Thanks for the yummy inspiration. 😋

When pawpaws are in season and I end up with a ton of them, I make daiquiris with them. I just wash, peel the fruit, throw everything into the shaker with the lime juice, rum and simple syrup, shake it aggressively to get the pawpaw juiced up, and make sure to double strain! You could probably try juicing the pawpaw separately, but with all the seeds and the low yield of juice, that sounds like a huge hassle to me!

I used to mix up what I can an Irish Coffee Old fashioned. Think the measurements I used were 2oz Jameson and Mr Black, stirred over ice. Then I took my rocks glass and add in three or however many dashes I was feeling that night, of Angostura Chocolate. I'd basically wash the glass with it at this point, swirling it around until there was none or minimal left before I put in a new cube and poured the drink over. Considering how close an Old Fashioned and a Manhattan are, as well the interchangeability of rum and whiskey, I could see doing a brownie old fashioned with maybe Peychaud's or even Ango Orange, as orange and chcolate play nice together. However, I feel one could even go a bit on the fiery side with Bittermen's Hellfire or any chili pepper bitter.

There is a technique for milk-washing that involves powdered milk instead of liquid milk that also works really well with powdered coconut milk. The upside to this technique is that it doesn’t require any acid to induce curdling.

Realised I had some of this brownie rum left over, and I've been on a bit of a milk punch trip of late, so I made a clarified orange and chocolate drink with it (working title is 'Chocwork Orange'). I used brownie rum, white creme de cacao (which I also learned how to make here), Cointreau, and some vodka for the base, then a 6% citric acid solution and milk to clarify. Quite happy with the result, but might try a few tweaks for the next batch. Except this time, I'll also be baking my own brownies ;)

I've heard it posited by my dad (who was himself a bartender for several years) that a "Rum Manhattan" can't really call itself a Manhattan because it's supposed to be made with whiskey. And instead should be called something that would more fit the rum. One such example he gave was calling it the "Havana" or the "Jamaica".

Back in February, I created a banana bread old fashioned for my bar. On a whim one day at home, I created a banana syrup using overripe bananas I had and coconut sugar. The syrup tasted EXACTLY like banana bread. To really nail the flavor, I infused bourbon with some perfectly ripened bananas and added a few drops of black walnut bitters. While it didn’t require buzzing a loaf of banana bread with bourbon and clarifying it, the resulting drink was spot on flavor-wise, and it’s become a mainstay at my bar.
