Manipuri Chakhao Kheer / Chak-hai Kher / Black- Purple Rice Pudding
✅Ingredients:
✔️ 1/2 cup chakhao (black rice, I used the variety grown in Manipur)
✔️ 5 cups milk (In the video, milk quantity appears less but I added 5 cups)
✔️ 1/4 cup sugar (fine granulated)
✔️ 1/3 cup condensed milk
✔️ 1-2 bay leaves
✔️ 2 cardamom pods (optional)
✔️ 1/4 fresh or dried coconut pieces (skin removed)
✔️ 1 tbs raisins (kishmish)
✔️ 1/3 cup cashew nuts
✅Note:
▪️Adding few drops of water, before pouring the milk helps the milk not getting burnt and catching up at the bottom - Learned this tip from internet.
▪️You can adjust the sweetness level according to your preference. Also, if condensed milk is not available, just increase the quantity of sugar.
▪️You can skip cooking the black rice separately in the beginning (as shown in the video) and just add the soaked rice to the milk right after adding cardamom and bay leaves. But, do increase the milk quantity by 1 cup more (i.e total 6 cups).
▪️Cook the kheer at low to medium heat and stir at regular short intervals.
▪️ Black rice comes in several varieties
and clolours. So when cooked, it’s taste and colour may also vary accordingly.
