1) sponge has some holes that means distance b/w particles is more. More distance means less attraction. Our force is more than the opposite force of sponge. 2) sugar is not flowing if we closely see one granule. Because of the tiny size of the crystals of sugar it looks like flowing. If we closely see 1 sugar crystal in the container we can easily say that size and shape of each crystal is not changing. There are many air spaces b/w each granules that give undefined shapes of sugar.

Answer 1 - There are holes in sponge so air can get trapped inside these holes and we can easily compress air so sponge is solid and can easily compressible Answer 2 - Sugar is made up of solid granuels which allows sugar to flow .It shows the property of liquid and sugar has definite volume but not definite shape therefore it is a liquid Answer 3 - The 5 states of matter are solid, liquid ,gas , plasma and Bose - Einstein Condensate.
