MANSAF
Ingredients
750 gms mutton, cut into 1½ inch pieces on the bone
1 bay leaf
Salt to taste
¼ cup + 1 tbsp ghee
¼ cup almonds, blanched and peeled
¼ cup pinenuts
2 medium onions, sliced
5 tbsps + ½ cup hung yogurt
3 tsps cornstarch
½ tsp all spice powder
Black pepper powder to taste
1 inch cinnamon
Roomali roti for serving
Pulao for serving
Method
1. Heat 8-9 cups water in a deep non-stick pan, add mutton pieces, bay leaf and salt and mix well. Bring to a boil.
2. Heat ¼ cup ghee in a non-stick pan, add almonds and sauté till lightly brown. Add pinenuts and sauté further for a minute. Strain the ghee and place the nuts in a bowl.
3. Heat the strained ghee in the same non-stick pan, add onions and sauté till translucent, add ladleful of stock from the mutton pan.
4. Switch off the heat under the pan with mutton and strain the stock.
5. Add mutton pieces to the pan with ghee and mix well.
6. Mix 5 tbsps hung yogurt with salt and 1 tsp cornstarch in a bowl. Add 4 ladleful of mutton stock and whisk well.
7. Add ¼ tsp all spice powder, black pepper powder and yogurt mixture to the mutton and mix well. Cook till the mutton becomes soft.
8. Take ½ cup hung yogurt in a bowl, add remaining cornstarch, salt, remaining all spice powder and 2 ladleful of mutton stock and whisk well.
9. Heat 1 tbsp ghee in another deep non-stick pan, add cinnamon, yogurt-allspice mixture and mix well. Add 2-3 ladleful of mutton stock and mix well. Add pepper powder and mix well. Add remaining mutton stock and cook till the mixture thickens. Transfer into a serving bowl.
10. Place roomali roti on a serving platter, pour the mutton gravy on top, place pulao in the center, top with cooked mutton pieces and sprinkle the fried nuts. Serve hot with the cooked yogurt-all spice mixture.

Hello , I am Jordanian and this is not the original Jordanian Mansaf recipe because Mansaf is not preparing by Yogurt, it's prepared with "Jameed". and the rice is not Basmati , it's Egyption rice or "SUNWHITE" type of rice. and have its own way in cooking. - *Jameed* : Jameed is a hard dry yogurt that is prepared by the boiling of sheep or goat's milk, which is then left to dry and ferment. The mixture is later kept in a fine woven cheesecloth to make a thick yogurt. Salt is added daily to thicken the yogurt even more for a few days, which then becomes very dense and is shaped into round balls. I have worked in Jordan embassy of Pakistan and got the chance to eat mansaf. You are right without janeet its useless

the ingredients mentioned by you are not found in India and even if it's there, it's in very few places where not everyone would have ease of access to it. this is a variant recipe of the Jordanian dish. plus we don't have Jordanian spices in India available that easily. the chef just gave us a way around to make use of the Indian ingredients in the best way possible and make it in Indian way so that we Indians are able to get a hint about how it taste even though it isn't even close to the real thing. At least learn to appreciate his efforts and he is a prominent Indian chef who am sure is aware of the real ingredients. so thanks for the link

That’s not the right way to prepare it. You are missing the key ingredient “Jameed” which is dried and salted goat milk

Good imitation of mansaf, main ingredients and techniques are missing, other ingredients are added that would change the taste... all in all, it looks eatable.

Our chef has tried his best in making the dish with local ingredients so that people can enjoy Jordan food in India, I will try this version for sure, it already looks so delicious

@@bertanyilmaz9818 yes sir, you can. if you have simple spices like cumin, turmeric, coriander, black pepper powder, red chili powder, and a few other spices available there in a nearby store or an Indian grocery store. then you can easily make Indian chicken curry. you don't need curry powder for that. we Indians don't even use curry powder. that's not even a thing in India.

The way u make wrong and should be rice colour colour more also u missing Arabic spices , Whts the original bread name In Jordanian they r not make mansaf with a yogurt They use Jameed duplicate mansaf
