Welcome back, friends!
It's #AprilisforArabFood and I'm kicking this month off with a very special episode of Sahtein where we learn how to make Mansaf (منسف), an iconic dish made for celebrations and large gatherings. Yes, Mansaf! The official dish of Jordan, loved across borders and and a dish that Fayzeh has truly mastered.
Don't be nervous! Mansaf is actually incredibly straightforward to make. You will just want to give it the time it needs to become perfect!
If you aren't familiar - It's slow cooked lamb in cooked yogurt served with rice and crunchy almonds- and there's nothing quite like it. After eating a big plate or two, napping on the couch with a "mansaf coma" is so real!!
Fayzeh, a Palestinian chef and caterer based in Jordan, invited me to her home to learn how she makes her delicious mansaf for her family and for mine. This is just the first in a series cooking with Fayzeh, who is a major inspiration for me.

Oil
onions
Cardamom pods
Bay leaves
Turmeric
Sweet clover
Almond slivers
Lamb in bone

Long grain rice

I’ll try to make it up here in Venezuela, i only have the pleasure to eat mansaf everytime i go up to the states and get some at my favorite restaurant runned by jordan and palestinian friends. This quarantine got my trip plans for summer ruined and now im in mansaf abstinence 😭, God bless you.

My husbands farther was born I Gaza but his family were made refugees in the 50s and so his dad grew up in Qatar and with mensef being a more western Palestinian and Jordanian food it’s not a meal known to his family. His mum was British and god rest her was an incredible cook but she had never heard of mensef. The first weeks we were married he cooked (he is a very good cook mashallah) I had traveled to be with him and he didn’t let me lift a finger. When I eventually was allowed to make him something I made him mensef. We have it every week allhamdullah

She's so nice and talented, obviously. You should make more videos with her, maybe even a separate channel. There are very few traditional home cooks able to describe they do what for why.

Clarify again, what can we replace jameed with? I live in Romania, there's no way I can get that here. I heard sheep yogurt+starch or Turkish Ayran? Am I correct? I had mansaf in Al-Quds restaurant in Amman, I'm still craving for it :D

Hello! Thanks for your question :) So here, she uses a few different yogurts for depth of flavor, so we can do that as well. I'd suggest using regular yogurt or sheep yogurt with a little bit of corn starch (this thickens it) and water and keep stirring it while it slowly cooks to prevent it from splitting. You could also add some turkish Ayran/yogurt drink to this if you can get it. The goal is to have a smooth, cooked liquid yogurt that takes on the flavors of the broth :) Let me know if this helps or if you have any other questions!

Thanks so much for watching! The spices I saw her use were Cardamom pods (lots), fresh Bay leaves, Turmeric on the rice, and **Sweet clover** which gives it that a rounded savory quality and has a very distinct scent/taste. You could also use a *bit* of an arabic seven spice mix which will give it more life :) Let me know if you have any specific questions!

I wish I could smell it across the internet. A simple yet lovely dish, the yogurt marinades and tenderizes the meat. Could beef or chicken be used instead?

Someday I'm gonna try to make it for husband, hes Jordanian n he miss his mama's cooking especially mansaf...but I don't like yogurt at all especially salty sour yogurt...he made me drink kefir milk once n I threw up. Lol...n I don't like lamb..just like hes allergic to pork, I'm allergic to lamb.

Great videos @nadiagilbert . Can you describe the difference between Palestinian and Jordanian mansaf? Seems to me Jordanian has a more gamy flavor. Both delicious.

Nadia It’s quite hard to follow, I still think is quite hard to do, I hope you share your version for two people, thank you for all the efforts and your videos, well done bravo I’m discovering the middle eastern cooking with you, North Africa is so different we don’t eat that much rice but my partner is Asian and have to cook more rice dishes.

For many people it's a big hurdle when making Mansaf! Of course, the original way always has its own unique quality- but I love that Fayzeh makes it accessible, encouraging us to use what makes it easier for us if it encourages us to try the recipe! And it tastes incredible because of the addition of other yogurts too. But I understand! If you prefer to use the traditional method, go for it :) Would never put it down!

I love mansaf. I worked in Medina Tabia bin ameliyat during Queen Noor and King Hussein. I love Jordan. My second home. I cant forget the people are very hospitable.

As she said in the video, she had only boiled it for a few minutes to remove impurities and then put it in fresh water for the broth. That's why it looked like that.

6:18 isn‘t the ratio 1 cup rice 2 cups water? Why is it 1:1 here

She also soaked and washed the rice, so it doesn't need as much water to cook - it's not exactly 1:1, she still adds a bit more water. You can cook your rice according to directions since some rice will be different, but always wash/pre soak it to get it to be fluffier!

Just a quick q- I tried making this using home made yoghurt (cows milk), added corn flour and water but my sauce split in the end. What would you recommend I did to stop it from splitting? Thanks!

To keep it from splitting you need to continuously stir and not leave it for a *second* - Fayzeh also recommends adding a spoonful of corn starch to help it thicken!
