A Step by Step - detailed Explanation of the Production Processes involved in Frozen Medu Vada Manufacturing.
Ingredients:
1. Urad Dal (Black Gram Dal) - 1 Kg
2. Rava or Semolina - 25gms
3. Rice Flour - 25gms
4. Salt - To taste
5. Black Pepper - 5gms
6. Coconut - 40gms
7. Green Chillies - 15gms
8. Ginger - 10gms
9. Curry Leaves - 10gms
10. Water - For Grinding. Around 400 to 500ml (depending on the desired consistency)
Steps:
1. Wash and Soak of Urad Dal (For 3 to 4 Hours)
2. Cut the Ginger, Green Chillies and Curry Leaves.
3. Grind of Urad Dal to form Vada Batter in the Wet-Grinder.
4. Mix all the dry ingredients in the Vada batter.
5. Heat Oil to Around 180 to 190 deg C and Form and Fry Vadas (Follow the 2 Step Frying Process).
6. Arrange the Hot Vadas on Sanitized Tray for Blast Freezing.
7. Remove the Vadas once cycle is finished and Core temp of vadas is at -18 deg C.
8. Pack and Store at - 18 deg C or Below Freezers.
