Students at the University of Cambridge and the University of Oxford in the UK brought maqluba, a traditional Palestinian dish, to demonstrations held on campus in solidarity with Palestine.
In recent years, Palestinians in Jerusalem started a tradition of flipping pots of maqluba to serve to protesters outside al-Aqsa Mosque. Protesters would bring large pots of maqluba, which means “upside down” in Arabic, and eat it under the eyes of the Israeli police. The flipping of the pots as the cooks shouted “Allahu Akbar” (God is great) became a ritual.
The beloved traditional food, also called the “dish of victory,” became a part of Palestinian protests. Eating maqluba became a prominent feature of the sit-ins in Jerusalem and protests elsewhere, serving as a symbol of Palestinian heritage and culture.
