Eye of round? Eye round? Since I started travelling around Brazil, giving advice on cuts and roasts, I have always come across names of cuts that were different from the names I learned here in Rio Grande do Sul (Brazilian state). When I arrived in a city in the North of the country, for example, some names changed and got me confused, and were unknown to me until then.
Today I decided to bring one of these roasts, which not only the name changes a lot from place to place, but also it’sa much requested cut here on the channel.
So, answering to requests, I bring this beautiful cut and roast, prepared as I learned some time ago, learning from people with a lot of experience and traditions.
