Oh Marcos, aglio e olio should be a fairly quick recipe! In italy we call it our middle-of-the-night snack after a long time out with friends! Just let the spaghetti boil a few minutes (3/4) like you did and then put them directly to the pan with oil, garlic and chili and keep adding the pasta water a bit by bit until the pasta has absorbed it all and it is nicely done. Add a little bit of oil at the end. This should make everything creamy and well blended. You can also chop some parsley to sprinkle at the end. I do not think that keeping the spaghetti 30 minutes cooking in their own heat is doing that much to them. It should take like 10/15 minutes to make the dish, it's really really simple! Marcos - check out the Rose Bowl Aquatic Center in Pasadena if you are looking for a pool. They have great hours and 2 Olympic size pools. Also you can easily run the rose bowl loop to get your marathon training in.

I feel you! I was a chef for almost 8 years before switching to web development last year. I’m also trying to pursue boxing at the same time. But here’s some honest advice: if you have multiple interests, then becoming a chef (with ambitions) might not be the best path.
