How do you keep your olive oil from getting too thick in the refrigerator? I have made a recipe similar to this but was so disappointed in the thickness/gumminess of the oil. I also didn’t catch how much your cheese weighed. Thank you for your help/advice.❤

It's a 1 lb block of cheese. Sorry for not stating it. As for the oil, in this recipe it didn't thicken overnight. But after a couple days it did indeed thicken a bit. What I did was let the cheese and oil warm up to room temp, it took a while but the oil returned to regular viscosity.
