That's due to the invincibility frames flashing at a framerate where youtube only catches every other frame when displaying, so it gives the illusion that they disappear, On their screen they're just flashing

Yes, although it was originally just a GameCube emulator, so Jacob may have learned everything about it being a GameCube emulator before the Wii emulation was added somewhere around 2008.

there is a way via bluetooth but im not 100% sure. you can also use a mouse as well

You can use your mouse as a Wiimote pointer, set up various buttons as the various Wiimote directional gestures, or just get a Bluetooth dongle and connect the Wiimotes to your PC to use them directly. Using a Bluetooth dongle is really easy if you actually have one. Just activate Bluetooth on your phone and try connecting a Wiimote to it, it's not difficult at all. Dolphin even has native support for actual Wiimotes if it detects them connected.

You can use GameCube controllersfor Mario party 8 with your Wii, you just plug them in and you can choose them instead of Wii controllers
