I wanted to visit Morocco, so I read about it, and what surprised me in reading about it is that it is a country of generosity and love for guests, and that Morocco was in the past a great empire that ruled the Canary lands, and they were the ones who built the palaces of Seville and the Alhambra. Morocco has a great history, and I read that the oldest university in the world was in the city of Fez in Morocco

For people who may wonder why when you shake the hand of a Moroccan (woman, man or child) she or he puts it on his chest. Don't worry, it's not for wiping her or his hand after physical contact. It's quite the opposite. It is an ancestral gesture in Moroccan culture which symbolizes that the energy one captures when shaking another's hand goes straight to the heart. And we only carry in our hearts the people we appreciate. Isn't it ?

Chef Ramsay has been making stuffed pigeon for years. My father also used to make stuffed pigeon after hunting. I’m sure each person’s recipe varies. What stood out for me is how the butcher in the marketplace mixed the spices for you with the meat instead of just cutting the meat and having to do it at home. Some Mexican butchers are the same but it’s rare to see in USA. My mom used to still add her own to it to “doctor it up,” but it did help with time management when cooking. ❤
