Stupid question, so we essentially keep paying our regular monthly mortgage payment majority of which goes towards interest and then on top of that we should make principal only payments each month? Do you need to specifically inform your lender of that?

Yes, you need to inform your lender all extra payments should go to principal.

I’m always curious that when people do pay off their mortgage, do they really feel that cash flow as much as they expected. Our mortgage payment is 1700. Which is a lot, but our taxes and insurance are 500 of that. So in the end it will be nice to have that, but it won’t make us rich!

It's a great point! For us, it was $1,300 back in our monthly budget. Not earth-shattering, but combining that with our Coast FIRE situation, it's allowed us to go to part-time work. That has been HUGE for the overall happiness level in our house.
