How to extract bone broth.
We have 3 stages.
-Preparation
-Cooking
Separating fat
PREPARATION: Put the bones in cold water, put a teaspoon of salt and a coffee cup of vinegar in it and leave it in the refrigerator for at least 4 hours. It shouldn't be a problem if you wait any longer.
COOKING: Pour the water and put the bones in the pot. Add new water. Put 3L of drinking water for 10 bones as in the video. A not very large cup of Turkish coffee vinegar, 1 teaspoon of salt. Throw 3 sprigs of parsley with stems, 1 sprig of rosemary and a quarter of a lemon with its peel into the pot. After boiling for 20 minutes on high heat, remove the foams that rise to the top of the water with a strainer. Put the pot with the lid on the lowest heat and cook for at least 6 hours. It's okay if you cook it more.
If you are going to make a pressure cooker, add water until the bones pass and cook for 2 hours on the lowest heat after the pressure starts.
Remove any marrow that does not come out of the bones. After removing the empty bones from the pot, drain the water and take the marrows into a separate bowl.
SEPARATION OF fat: Put your water that has no grains in it in the refrigerator. When the fat layer on it freezes, break the fats and separate them. Throw in the buttonholes and run through the blender. Or pass it through a sieve and add it as a puree. If your water is cold, the fat particles in it will form a white foam on the water when the blender is running. It will disappear when you heat it.
While drinking like a beverage, add the spices, lemons, etc. you want and consume it as well.
