What a delight to see Amber Lambke! I was lucky enough to attend several of her Kneading Conferences in Skowhegan, Maine. I learned so much from many, many baking experts! She was is a huge force for revitalizing central Maine with her Maine Grains mill and farm support. All the flour they sell through Maine Grains is stone ground - the only way to get all parts of the whole grain you are buying. If you aren’t up for pressure canning your oats, just add rolled oats to your bread. I like to put about 25% rolled oats in my mixing bowl, add an equal amount of boiling water & allow to cool for 15-20 minutes. Add the rest of your bread ingredients (high gluten flour will help counteract the lack of gluten in the oats). I usually add 50% bread flour and 50% unbleached or bread flour. The bread has a wonderful chew and flavor. Thank you Martha, for your wonderful recipes and bringing in wonderful people. I feel that I need to research how to make his canned oatmeal.

I love oats. My favorite bread is oatmeal bread, my sisters used to say, " How can you eat oatmeal, its gross!" I also love oatmeal cookies. I like that you have people on who are experts on what they grow. Very interesting. I love your baking series.❤
