Always be sure to cook the beans thoroughly. Undercook beans can cause major stomach upset and actually make you very very sick. Always follow the recipe exactly to make sure you don't make your household sick

I have found that the freshness of the beans determines their cooking time. Old beans that have been in my cupboard for over a year took hours - 3!! - or more to cook after soaking for 2 days. By comparison, beans that are fresher may not even need to be soaked. Lentils cook in an hour or less; red lentils in 20 minutes. So, . . the older the beans the more cooking is needed.

I made split pea soup yesterday and the beans were from an International Market so they tasted so much better and I wasn't as bloated and over-full so they were probably not GMO beans. I cook beans all the time and watching the video here now so I can learn more.

But Martha, my mom sorts, rinses her beans and cooks them on the stove all day, nice and slow. She doesn’t soak and throw all that good flavor away. No gas. I sort and rinse my beans, bring them to a rolling boil, let them boil for 2 minutes and take off the heat and let sit for 1 hour. Don’t throw out the water, put back on the heat and bring back to a boil, lower heat, put in ham for seasoning. Do not salt yet. Let them gently boil for about 4 or 5 hours. You may need to add some hot water if the water gets too low. The slow, long cooking brings out the flavor of the beans, makes a thick bean sauce and also reduces the effect of gas when you eat them. At the end, if you taste and they are getting soft, taste to see if they need salt, which they probably will, then I add salt and pepper to taste. Let them cook for a little bit longer and taste again. They may need more salt. If you add salt at the beginning your beans will be hard and not get soft. The amount of salt you may need to add depends on how salty your ham is. You can always add salt, but it’s hard to take it away. We have brown pinto beans served with fried potatoes and onions and cornbread. We would also have wilted lettuce in the spring too. So yummy. I could eat a whole bunch of that.

I've been cooking Pinto Beans most of my life, as did my Mom. We never soaked them. Pinto beans cook just fine in 3-5 hours depending on your stove, and amount being cooked, and temp.

Where the pinto beans! I remember my mom used to cook pinto beans with salted pork on the stove all days either on Saturdays or Sundays. By late afternoon the house would be awash with it's scent and by dinner we would eat it with frybread. Sometimes we would add Cheese, onions, chili and ground beef. But beans by itself is just the best.

Yes. Cook in high for 4-6 hours, no need to soak. Add your onion, garlic cloves, a carrot, a pinch of salt, a pour of olive oil. Cover with 6-7 cups of water, make sure beans are submerged. Check after 4 hours. May be done, if not cook another 1-2 hours, add hot boiling water if needed to cover the beans.
