Martha’s mastery of cooking is based on simplicity! I am Albanian and her cooking reminds me so much of how my grandma and my mom cooked - Fresh, seasonal veggies, minimal ‘extra’ ingredients and allow the natural favors come alive. I have never understood the tendency to make cooking ‘difficult’! Loooved the story of the corn and when to consume it! Growing up, my grandma would just go to her garden behind her farm house and get fresh corn. We would cook it right away and it was paradise! Before leaving her house, she would pack some corn to take with us. Of course, it never compared to grandma’s corn. I always thought that mom did not know how to cook corn 😂.

Yes, farmers markets are great. Being retired, I left my large organic gardens to move near my kids, east of the Mississippi River, so miss them, but now, I just try to show my grandkids that seeds are related to food, in their little 5 ft by 12 ft raised bed. They love digging for potatoes. Carry on, you are doing a good work.

I slice my carrots and cook with just enough water so they're done. I then add a couple of tablespoons of apricot jam. Stir until fully coated and water is evaporated then serve. For a savory dish add salt and pepper and toss with a favorite mayonnaise after removing from pot instead of jam. Always allow water to evaporate instead of throwing it out as it has a nice mild sweetness to add to carrots that work well with the mayo.

@@illyriumus2938 You know what? One day I was in the same situation like you, a tiny balcony and two windows in my kitchen were my garden in that apartment. I offered the manager to clean the front garden of the building for free in order to get more room for planting and he accepted. After couple years we had an opportunity of getting a place with more área for gardening fruits , vegetables and flowers. Everything in this new place started to grow so beautiful that I felt bad to eating it. The thing is that it doesn’t matter where you are because you will always have “the magic” of growing greens and enjoying it at the same time and who knows if some day you would be blessed with more room for doing what you love. When you take care of nature, nature take care of you too !🥰
