I agree with you. So many things today are done in a hurry with negative attitude... Back in these days people cherished their time and talents and enjoyed sharing with us and helping us learn more... Way to much anxiety in this world now.

Martha Stewart my mother is now long gone and a Polish Jew who almost perished in the Holocaust but managed to make it to North America and my sister and I are probably unworthy recipients of many of her and our Dad's great ideas. But they are ever present in our minds and hearts and some fundamental recipes remain, indelibly. I thank you and your mother for this collaborative presentation. As a foodie I mess about with food as the characters of The Wind in the Willows Messed about in Boats .. a meditative exercise, but this was utterly lovely. Many thanks!

My parents came to the United States from Russia in 1911. They were Germans from Russia. My mother made a vegetable soup she called Borsht but it didn’t look anything like yours though she did add beets, too. I loved her soup and we had it often.

I know this soup my friends made this for me, they are Central Europeans. I love how each and every country has their own twist on this soup. Same goes for piorogue pastries❤

Beet kvass that has been fermented until sour is a great borscht starter as well.

Oh, my goodness, just found this recipe (vegan), made it today, had two big bowls and eyeing a third. Oh, and I made the vegetable stock. Both were so easy. I never baked my beets, and that retains the colour and nutrients as opposed to boiling. My tummy is happy! Thanks.

I haven't attempted borscht soup for decades, only eating beets at a buffet when dining out. My husband came home with a good deal on beets and said to do something with it. I quickly went on youtube how to, and of course, selected Martha Stewart. I surprised myself making it, now want to do it again, since I missed some things like adding flour for thickener and had only parsley (no dill weed). I ladled beet broth in with sour cream and it was so smooth. Amazed that the lemon juice stops the red bleeding. Thank you for sharing this special recipe, going to watch it a few times.

I like watching Martha and her mother. Beets are high in immune-boosting vitamin C, fiber, and minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas). Not to mention these ruby red roots of tasty goodness are a unique source of betaine, a nutrient that helps protects cells, proteins, and enzymes from environmental stress. It’s also known to help fight inflammation, protect internal organs, improve vascular risk factors, enhance performance, and likely help prevent numerous chronic diseases. Beetroot soup is very healthy. We eat once a week. In the summer we add beet leaves to the soup. Instead of lemon, you can use vinegar. We usually eat with whole potatoes in the soup or mashed potato on a separate plate. Clean red borscht (Barszcz czysty czerwony) is served for Christmas Eve. We make refreshing sour beet kvass from raw red beets with salted water, sourdough rye bread, garlic, bay leaf and allspice. It may take three to five days to sour.

This recipe reminds me of Babcia, I miss her dearly and was just thinking about all the foods that we ate during lent. Thanks Martha for reminding me and your mother also in heaven with my will probably making all these for next week. I do mine very similiar I use lemon But instead of dill I use the beet tops , Carrots potatoes Garlic Mushroom Just little creme ,

I made this soup today. Fabulous .. just like my Mothers. Used the four fresh beets, but next time, I will also add one or two cans of string beets that my Mother did, so there’s more to chew. Otherwise, it was delicious. The lemon is a must.

love these classic videos also; so many different recipes but this is great. I have a friend whose childhood memories include this soup and it's almost exactly like this! My Dad was Serbian and I have an entire translated cookbook of extraordinary meals.

well, this is really delicious beetroot soup(we do it too and call it Polish beets soup/ usually serve it cold, in the Summer) , but it's not a borscht =)

Martha's mother could have had her own cooking show to LOL I had some unique food experiences in my childhood my mother used to clean for this elderly couple and he was polish and she was Czechoslovakia they became like second grandparents to me because they didn't have any grandchildren and they had wanted grandchildren bad so they taught me a lot of things trust me meal time was always good

As a Romanian, I don't get this slavic recipe. Borsch is a soup in which you put the key ingredient: the borsch itself - which is a liquid from fermenting wheat bran + corn flower + black bread +etc + the particular fermenting bacteria (which is the key). This liquid is sour like lemon juice, and is added to make the soup sour. Personally i love drinking it by itself, more than adding it into a soup. But this recipe doesn't say anything about adding this sour fermented liquid.. this is just a soup, not a borscht.. (its possible that this is completely different in Slavic countries versus Romania or Balkan/Turkish influenced countries)
