Gee, Mary, memories. Another lifetime ago, before we even had children, (😳my eldest is almost 44!😳), I hosted a Tupperware party. In those days, you’d get steak knifes, etc household items for hosting, not the Tupperware as is received today. Anyway, long story longer, I received two cookbooks, “Make A Mix Cookery” and “More Make A Mix Cookery”. Still have them! Love how you’re teaching a whole new generation, or, two, I suppose, how to have nutritious, on-hand mixes, that don’t cost a major portion of their food budgets, as store-bought mixes do. Wonderful! Especially during this pandemic and ensuing lock-down and social isolation , a blessing in disguise, as women and men are, so often, cooking more often with the kids in their lives! Love it! I just made the hot chocolate mix. The only thing I did differently is I added cinnamon to the mix. It is good for controlling blood sugar and my kids love the flavor. I am also going to make a sugar-free version for my Mom. Basically, everything, but the sugar. That way she can enjoy/sweeten it with agave when she wants a cup, without spiking her blood sugar. I have made hot chocolate mixes every year,but never thought to blend/powder the sugar. It makes a HUGE difference!! It mixes beautifully with no more grainy residue. Thank you, Mary for sharing your wisdom and genuine joy for cooking. With all the horrible things happening in our world right now, your can-do attitude has helped me recover my joy.

Bless you! One of my 'pet peeves' about cooking/baking, is all of the steps involved in getting anything from concept to plate. It can be overwhelming to me before I even pull out a bowl. While I can spend hours at a computer researching and writing reports, the idea of spending an hour in the kitchen gives me agita. These mixes will certainly ease my anxiety a great deal!

I'm watching from very humid N. Louisiana. Thank you for sharing these recipes and explaining about the silica gel packs. I've seen them in all kinds of dry food and supplement products but it never occurred to me to buy some to use in homemade mixes. I've made creamer and hot cocoa mixes for gifts (that didn't taste as good as yours) and hoped the recipients used it up in time before it started clumping or worse. Thank you, again!

Have been doing this for some of my recipes for a while. When I make gingerbread or a cake, I will put together all the dry ingredients while everything is out for several recipes of that same item. Then it’s easy to make something special with less mess and time.

Definitely. For these mixes, I wanted to leave out the fats - even if saturated - because they would moisten the whole grains shortening the grains shelf life. So happy you liked these recipes! Love, Mary

0:53 for a greater shelf stability, one can vacuum seal the mixes in Mylar bags with oxygen packs. You can also oven can in mason jars.

@@lindakean7392 Hi! YEARS & YEARS!!! Waaaay beyond your six years. Some say 30-50 years if properly stored. I just remembered I had this in my saved video playlist. Here is an excellent video to help you understand the entire process. She explains it very well. She puts her leftover o2 absorbers in a jar. @@MsBeachLizard Yes I have seen those videos and have mylars that I havent used yet. Im a little intimidated by the process! Wasnt sure if oxygen absorbers or silica packs should be used with Marys make ahead mixes.. Im guessing silica since there is milk in there??

@@lindakean7392 No problem! No fear! Just jump in 🤗 Use BOTH! The o2 absorbers prevent spoilage by removing oxygen, which in turn keeps out microorganisms (mold, bacteria, yeast), and bug-type pests. Pests cannot breed-much less survive-in an anaerobic environment. Oxygen absorbers can also help with the moisture, but that is the sole purpose of the desiccant packs. However, note that food grade desiccants will *not* control microorganisms. So use both. (Just don’t use o2 absorbers in sugars, baking soda/powder.) The silica must be *food grade.* Just make sure whatever you store, store it in a cool and dark place where nothing can get to it. If there is even a question about possible pests-or if you are storing a lot at one time-put your Mylar bags in a tote with the lid. Have fun!

I just discovered you and absolutely love your channel!! I grew up on a self sufficient farm with parents and grandparents that nurtured skills like this in me. I love that its making a comeback! But I have a question for you. I make my biscuits with self rising flour. 2ish cups with salt, crisco and buttermilk. How would I sub out the self rising? Like what would 1 cup of self rising be equivalent to whole grain flour plus BP + BS?

Wondering if you’d be willing to do your recipes in grams as well as cups. That’s one thing I love about King Arthur: the option. I guess it would be a LOT more work for you….and I get it! I’m just beginning, well actually beginning again, my traditional foods lifestyle. I just have a question about eating un-soaked, sprouted, or soured grains. Is it ok? I thought that all grains that we eat need to be fermented somehow. I have just found you channel and love it so much, thank you.

Hi Mary! I absolutely would use every one of these baking mixes, I can't wait to try the brownie. I was wondering a couple of things. First, can I combine two different sugars such as coconut sugar and organic cane sugar in the same mix, and also how long do the silica packs last? BTW, I use your recipe for beef bone broth and it is great. Thank you

Great questions! Yes, you can mix sugars. And as to the silica gel packs - they basically last indefinitely. Depending on what brand you use, they either change color, or have a colored dot on them that changes color, or give you some other indication once they have absorbed as much moisture as possible. Then what you do is remove them from the jar and dry them out in the microwave. And then you can reuse them and put them back in your jar. Something else you may find very helpful is to put the mixes in the freezer to kill any hidden bug before they hatch. You may want to store them in the freezer as well. I just had a whole bag of barley flour go buggy and I live in the Greater San Antonio area so I am not that far from you. Thank you for teaching people to make healthier foods.

Hi Mary Love the mixes, looking foward to more, love having as many things ready to use as possible. I usually use a jiffy corn mix in my corn casserole that I make for Thanksgiving. How much of this would I substitute for the one little box? The same amount? Thanks!

I’ve used my homemade mix in my corn bake recipe @ Thanksgiving 🦃, too. I just use the same amount. Instead of trying to measure how much is in the Jiffy Mix, I just used the weight printed on the JM box, and.weighed out that same amount on my kitchen scale. Easy-Peasy! Lynn De Guzman Rumford is a brand you can find in a lot of grocery stores or I order from Bob’s Red Mill from time to time. They have a great aluminum free baking powder. God bless!

Hi Mary new to your channel, I'm reading the recipe and I am kind of confused I'm using organic plain white flour do I still need to use 3 1/2 whole wheat flour plus the 1 cup of plain flour all together? Thanks , you are wonderful and your time saving ideas are great help and I love it.

Are you using any whole wheat flour? If so, yes, you would use the ratio you mentioned. If you are using all plain white flour then you will use 1/4 cup less liquid when you go to use the mix. Love, Mary

Mary, can these recipies be adjusted to use dehydrated or powdered egg and powdered butter? Im thinking in terms of a shelf stable mix where water can be added when eggs and butter may not be available. You can purchase the powdered items on prepper sites..

could you add other things to the brownies like chopped squeezed zucchini or banana mash without changing the balance of the premix? I would like to bulk up the nutrients and spread out the sugar a little. the bananas might sub out some of the sugar. but would it make the mix too wet?

Hi Mary. New to your channel. Appreciate all of the knowledge you are sharing with us. My question is: When should I use oxygen absorbers vs silica gel packs? If I seal the mixes in a Mylar bag or vacuum seal a mason jar, will they last longer than six months? Thanks!

Hi Bill, Silica gel packs help keep things moisture free but when it comes to using Oxygen Absorbers, you need to be very careful. I have learned...They can only be used with foods that have 10% moisture or less. And many believe that whole grain flour is too oily (and therefore not “dry” enough) to be stored with Oxygen Absorbers. I go over all of this here: kzbin.info/www/bejne/mp-TpniJr9GCrNE And I go over Mylar bag storage, here: kzbin.info/www/bejne/aZvFo6pjg7F5las As to shelf life, when it comes to whole grain flours, no matter how you store them, I think it is tough to get them to stay fresh past 6 months. And it is generally NOT recommended to store whole grain flours (not whole grains) in Mylar bags for the same reasons that they shouldn’t be stored with Oxygen Absorber. The oxygen free environment can create a problem with botulism when it comes to moist or oily foods. Love, Mary

Just made brownies from the mix for the first time. While mixing it together it seemed very dry. I couldn't pour it. I added an additional egg and then ended up patting it into the pan. Any thoughts about what might be going on? They are in the oven and smell amazing.

Are those lids the plastic ones Ball makes? And isnt that gonna keep things too moist? Can we use oxegen absorbers instead of silica? Its what i have on hand.
