If you’re looking for a delicious homemade bread recipe, this guide will help you make a flavourful loaf with a golden crust topped with black and white sesame seeds. Perfect for a day when you want fresh, homemade bread and a traditional one that is made in many households in Southern Lebanon especially during the month of Ramadan.
Ingredients:
500g bread flour
310ml lukewarm water
1/2 tbsp yeast
2 tbsp caster sugar
2 tbsp milk powder
1 tsp Mahlab (optional)
1 tsp aniseed powder
1/2 tsp salt
100ml ghee
Black & white sesame seeds
Method:
Step 1: Activate the Yeast
In a small bowl or jug, combine 310ml of lukewarm water and 1/2 tbsp yeast. Let the mixture sit for about 10 minutes to activate the yeast.
Step 2: Prepare the Dough
In a large bowl, mix 500g bread flour, 2 tbsp caster sugar, 2 tbsp milk powder, 1 tsp aniseed powder, 1/2 tsp salt, and 1 tsp Mahlab (if using).
Create a well in the centre of the dry ingredients and pour in the activated yeast mixture and 100ml ghee.
Using a fork, start to combine the ingredients, then knead with your hands until you have a soft, smooth dough.
Cover the bowl with a clean cloth and let the dough rise until it doubles in size.
Step 3: Shape the Dough
Once the dough has risen, turn it out onto a floured surface. Divide the dough into two equal parts. Using your hands, shape each piece into a long rectangle. There’s no need for a rolling pin.
Step 4: Add the Finishing Touches
Optional: Brush the dough with an egg wash for a golden colour.
Sprinkle black and white sesame seeds over the dough.
Use your fingertips to create dimples all over the dough.
Step 5: Bake the Bread
Preheat your oven to 190°C (375°F).
Place the dough on a baking tray and bake for about 15 minutes or until golden brown.
Keep the bread in an airtight container to maintain freshness.
This bread is best enjoyed within a day of baking.
