Well, I have to do low carb, low oxalate Low salicylic acid and low histamine way of eating for the next couple months and somebody suggested rutabaga fries or rutabaga mash. For mash I used butter and heavy cream and salt. Topped it with a little bit of freeze dried chives holy smokes, absolutely delicious annd only eight net carbs, that’s it.! Potatoes 50 carbs depending on the potato, so rutabaga for the win

Unless you're scared of the carbs, you could add some potato and carrot to the mash. It's an old Swedish recipe.

I've heard a few names, including turnip, although we in the US know turnip as something else!

I have loved rhutabega since I was a little kid. I don't have any butter, but adding a generous amount of Marsala wine to moisten it up while mashing it tastes very good also. I also add lots of onion powder, or garlic powder or both in the water as I begin to cook it,

PS for those in the middle of transitioning to a different vegetable or low carb, etc, I figured out to add a big bit of mash potatoes. I did this with mash cauliflower, and my husband didn't recognize the cauliflower!

Seems like a lot of the rutabaga is wasted in peeling it. I wonder if you could put it in a pot of hot water and melt the wax off then peel it with an actual peeler so that not so much of it is wasted.

The light colored flesh is bitter. Like the pith of an orange. Need to perl down to the colored flesh to be rid of the bitterness.

I will have to try that! I’m sure it really boosted to energy level of the meal and could keep one going all day. I like to rub coat baking potatoes in a very thin layer of bacon fat before baking - absolutely delicious! Thanks for the tip. Peter
