meringue
・20g...sugar
・35-40g…Egg white
➔beat egg white until the stiff peak stage

・10g...malt syrup
➔boil down to 110℃　(230℉)

・7g...sheet gelatin
➔soak with cold water→drain water→warm a bowl of gelatin in hot water

・food coloring (blue,black)

メレンゲ
・砂糖20ｇ
・卵白35～40ｇ（卵Ｍ～Ｌサイズ１玉分）
➔しっかりと角が立つまで泡立てる
・砂糖40ｇ
・水30ｇ
・水あめ10ｇ
➔110℃まで煮詰める
・板ゼラチン7ｇ
➔冷水でふやかした後、よく水を切って熱湯で湯せんする
※メレンゲと合わせる直前の温度が低いと失敗しやすい
・コーンスターチ
・食紅（青・黒）
