To stretch the burrito pie, when meat is expensive or not available, I use rice as an extra layer. I cook the rice with 1 cup of salsa per 3 cups.

I continue to love your program. You'd think we might get tired of watching someone else cook but I guess we DON'T!!. Of course when you are out playing with the children(2 footed and 4), I think then that I like those best. 43 and 40 years ago when I had my beautiful sons nobody helped me, except my mama. She flew in from Texas. My mama treated me beautifully. She treated her grandson like royalty. I was so thankful to my mama. So at 67, I am the cook. I live in the country. Miles from each other but, I know my neighbors better than my kids who live in high risers. I am just an old southern cook.

Growing up, that’s all I knew, and nothing better. What I’d give to pull up a chair to Grannies table full of every meat, and home grown vegetables. She’d throw a table cloth over what was left, and we’d have it for supper. Don’t forget cornbread crumbled in buttermilk! Why didn’t we ever get sick from it not being in the fridge?

I think it's wonderful that your making the meals for a friend just after they had a baby, I'm sure that will be a big help to her family. In my church we can do whatever charity work we want to , our church doesn't have a Food Pantry. I've been to so many churches that do a great deal of community service. Do your children ever help you in the kitchen? I started to cook with mom at 12. Why did you and your husband decide to have a large family? I was planning on having 4 2 girls and 2 boys. Ended up I didn't have any. God bless you and your family.

This is so satisfying to watch. I do a large batch cook in the fall so I can avoid going to the store during our hard winters, and then smaller batches a couple of times during the year. Watching you, I realized using a white board will make it easier not only to keep track of everything, but write down the adjustments that usually happen along the way. Yay - I get to shop!

RE: finding meat, check your local butchers and meat processors. I was able to purchase 80 POUNDS of chicken breast for $1.50 a pound.

Yep. I'm good on chicken but the beef prices are really getting up there. Bought a side of beef from a local ranchers and bought some from another place to hold us over till the slaughter. Keeping me around $6 a pound for beef. Pork is something I can get close too. Although those prices are not bad.

@@rhiahlMT We did the same except we bought a half because five kids. We averaged $2.76 a pound, including hamburger, steaks, and roasts! It was amazing. If you call a meat processor, they can usually help you find a farmer that has some cattle coming to butcher soon. If they don't, they can keep your name on a list. Shop your local farmers.

Right! My local butcher shop has amazing meat package bundles for a good price and if you say you have a large family they add little extra for a small extra amount. Also we have a meat processing place about 1hr drive that has meat decently priced! Always ask around or just google. You never know what's around

I never thought the box of plastic wrap would run out. It has lasted a long time. I actually want a box to help with the freezer meals I do. I am making some meals for my parents as they are older and having trouble getting around and of course for my own little family of 3. I make your fried rice, baked spaghetti, pizza casserole, and your fantastic blueberry bread. My parents absolutely love your bread. My mom was sick earlier this month and was barely eating. I brought her some blueberry bread and that triggered her appetite. She is now eating again. My husband requested I make your blueberry bread but make it banana bread. He loved it. You have been a big part of my cooking for my family. Thank you.

I make meals like my 6 kids were still home, only it is just me.I'm 74 this Nov 22 and i cook whatever I like using restaurant pans. After it is cooked, i divide it in my size and freeze.A couple years ago i had 6 heartattacks,one right around Christmas and Feb 28 had1, the next day I had 4. I'm still not the greatest but im here.it's along story.I still have a 95% blockage but I'll get to it.I love to watch your show.

You should try kitchen cushion floor pads. One in front of your sink and the other in front of where you stand when you prep...plus another one in front of your stove top range. They are amazing! You can get them at Home Depot...etc.

Also.... fyi if making food for dietary needs..... check any spices.... not all are gluten free.... also make the allergy free meals first so you dont risk contaminating them.... even touching a flour tortilla before touching a gluten free tortilla can trigger a reaction if you accidentally forget to wash your hands in between. My family are really REALLY sensitive so I have to buy whole spices and make our spice blends ourselves. However you are an awesome amazing person helping out these families.

I have dietary restrictions that the rest of my family doesn't have so I make a bunch of one person meals that I keep in the freezer for when I'm making something for them I can't have. It works so well. I got a bunch of glass baking dishes (no microwave here) off of Amazon for a good price. I keep 10-20 on hand and cook them once every month to every other month.

I just have to say I absolutely love your spirit. You are so thoughtful for making your friends those meals. I have a little one coming in less than a week and had planned on getting meals together. Unfortunately it took us longer to get in our new home than we thought (been in it for a month now) and she decided she was coming sooner than we expected. I was able to stock up my pantry, fridge, and freezer so I'm sure we will be ok. Cant wait to see the second half of the video. God bless
