I've watched 8 or 9 videos on how to make corn tortillas and each varies a bit from another one. I've made so many tortillas in the past three days my bag of Maseca corn flour (not instant) is almost empty. My mother learned how to make tortillas from her mother but she didn't teach me. Only my sister. I'm trying your method/recipe next. Thank you.

Edit: I just made these, following exactly as you said, and oh my gosh, they puffed up a mile! I've never been able to get mine to puff before. Thank you so much for your help on this. OK, I'm sure there's a little skill going into getting the dough to the right consistency, which then makes the cooking part easier to puff correctly, but dang, I'm impressed with that puff!! I've never seen anybody else get their tortillas to puff like that. Thanks for the times and temps, I'll try this at home too and see if I can match your puff. BTW, great channel, I've seen your presentations change over time and getting better, hence subscribing to you. Mexican food is the best food!

Hello Rossana and Nelson, I would like to say that I have also mastered the puff with no dry circumference around the tortilla. It completely makes the difference on the flavor of the tortilla. The tips you gave are super useful for first time tortilla makers. Now onto the added bonus stuff. any tips on keeping the griddle clean after a few tortillas are cooked? Looked like you had some sort of brush but I always get sticky parts that burn on the cast iron

I find using masa harina (like maseca) is much easier to get the puff vs making nixtamalization masa from scratch. I get mini puffs but not the balloon lol.

i make nixtamalized corn and masa once a week, I use a hand mill- so i think because it’s a coarser grind in comparison to finely ground masa harina that it hinders the puff, but also, I started adding more water and kneading a little more and i’ve found that getting more hydration really helps- as long as it’s not too much!

I've only had a few tortillas puff in all the times I've made them, so I'll give some of these tips a try! Would the method with the heat and thickness of the tortilla itself work for flour tortillas too?? I'm inconsistent on those puffing as well 🙃

I am looking forward to making some tortillas that come out soft and do rise when cooking. I still have a lot to learn and at my age I believe it is time. My mother used to make the best flour tortillas. We did not use or eat corn tortillas. I grew up in Texas a family of 12 kids and my two parents. I have tried to make flour and corn tortillas but neither come out soft. I still have hopes at and by my next birthday I will be a pro. I am 81 years old. No one of us girls make them as my mother did. There are of us girls. I will one of these days make my mother proud. She no longer is with us but I know she will look down and see me.
