It’s true, but if there’s a standard for how to determine good restaurant, there must be many restaurants change and adjust itself to meet the specific standards, in order to get stars. Western standards are not universal, I can say many people in the US and Europe knows mapo tofu especially in the US, but it has 0 star in chengdu’s main restaurant. At this point, I believe at least Michelin star restaurant is not for Chinese restaurants, it is only applicable for western restaurants. They never wanted to know anything other than their own flavor. Well, Japanese are always followers, even though it has same number of stared restaurants as France their restaurants are only sushi/sashimi/tempura. All the others are western food restaurants. This happens in all industries, like manufactures, telecommunications, everything you name it, everything they come up with a standard first and call it universal standard, in reality it’s just a western standard. With standards they can easily higher the entry barrier or set up a serious rules for a industry. But I can see this circumstance will not go long, because people are realizing their tricks.
