Respectfully want to point out that onion is commonly not added to hilsa. It overpowers the flavour of the fish.

In America, Ilish / Hilsha fish is called Shad fish.

I think Ilish should not be paired with onion. Also, you should not cook ilish for more than 10 mins, which would mean that raw onion taste would overpower the smell of the fish, especially because you start with a cold pan. Well presented recipe though, good luck
