The Garibaldi is one of my all time favorite Highball drinks and it is so simple and so refreshing. I also want to note that those who claim to dislike Campari would do well to order this one, the flavors are paired so well (Campari and Orange is an obvious pairing) that I think you might be surprised by this one. A perfect brunch drink!
This cocktail was named after the Italian General Guiseppe Garibaldi who contributed to Italian Risorgimento (resurgence) which led to the unification of the country in 1871. He is considered one of the greatest Generals of all time. The name of the cocktail comes from the "unification" of Campari from Northern Italy and Oranges from Southern Italy.
Campari is a product created by Carmine Campari around 1860 and hails from Novara Northern Italy. It's distinctive red color was originally extracted by using crushed cochineal insects, but don't worry the process has changed since those early days and now it is vegetarian! Also when in season you can use blood oranges to make this a little more authentic and you'll get wonderful flavor and color. alright that's all I got for this one! Enjoy it!
For this Garibaldi we are employing a technique created by Naren Young of the bar Dante in NYC. When he makes Garibaldis he runs the Orange Juice through a high speed Juicer (A Breville I believe) this aerates the orange juice and makes it fluffy. I use a lower tech approach here (since I don't have the juicer) and give the orange juice a good old shake in a tin to get the same effect.

It's funny how that pallet change seems to happen in all young bartenders I know. I think it happened like after the last Negroni week that I fully surrendered to campari and know it's usually what I drink when I go out.

love campari... always keep a back up bottle.. ha. love trying to get others to like with spotty results. ha boulevardiers(had spell check that one) , negronis, siestas, junge birds!!!(my fav campari tail) and now i have a new drink to try. :) thanks!

2 oz. seems a bit heavy handed. I’d suggest starting off with 1 oz. and add more if desired. Also using blood orange juice makes for a brilliant and slightly sweeter version.

Jim Fererro absolutely adjust as you see fit, for 2oz is the best balance but Naren Young does 1.5 for me an ounce is a bit light but to each their own as they say :)

I had myself absolutely convinced this cocktail was sometimes called a Nord e Sud (North and South) and that some video out there goes through the history of campari in Italy. Maybe I'm crazy. Either way, nice to go back and try the simpler cocktails. Like you say in another comment, modifying it is the key for me, I had to grow accustomed to campari, and it's always freshly squeezed orange juice for me. Blood orange if it's in a jug.

Wow! Great video and that's a really Tasty highball! Just made it and I am one that absolutely loves campari and for me it is just a revelation that it can be so good an velvety by just mixing it with aerated orange juice!

That Breville aerator is next level. I have tried to aerate with a blender and the best I can seem to get is to stick the fresh juice in the freezer for a bit to lower the viscosity and then blend it for quite a while, but I still cannot get it as “fluffy” as the version served at Dante’s (they of course have a Breville).

What is everyone's thoughts on layered drinks like this ? As a bartender I do like the look of it, but if i m serving a layered drink to a guest without a straw or means to stir it, that means the first couple sips ( at the very least) are going to be completely imbalanced because the different elements aren't mixed together.

Definetly going to try this. So you had a little trouble appreciating Campari? I must admit that I sometimes have cheated and replaced the Campari by Aperol. But not any more. I love the stuff. One thing I still have a lot of trouble with is Fernet Branca.......

lol I'm from italy nad hearing you say: A GUY called Garibaldi make me laugh, I mean it's like if you hear me say A GUY called Thomas Jefferson :D Here Garibaldi it's a really important history figure as you said unified Italy with his 1000 soldiers, but in the south we dislike him couse it was more of a conquest of the south then a unification. I just love campari. I have never tasted it as bitter. To me it's like grown-up fizzy drink. All I do is ice Campari about half fill a very tall glass and add tonic water mix drink and repeat and no it's not bitter to me

Interesting, it’s more bitter than I imagined it would be, however I can’t explain why I like Campari, it doesn’t make sense, my pallet says something about it is off putting but I still love it.

I really like making a spritz out of shaking dry and sweet vermouths, campari, and juice of a medium orange and pour over soda water and ice. I call it the Perfect Ghabraldi and it is wonderful.

Hmmadison96 it can work, I just wonder if there’s a version made with soda water, because just adding it to any drink is going to water it down. Sometimes especially for stronger drinks it doesn’t matter and it’s still really good, but I think the drink will be better if the creator of the recipe had water in mind when making it.

Does the type of orange the juice comes from matter for this drink? I assume you’re using navel oranges? They seem to be the default for most cocktails.
