I have the Ryusen. I told myself it’s the last knife that finishes my collection. (Well 😁). It’s laser like and amazing. I am soooo happy with this knife. I like the turning mushroom technique which I will try. I suspect the cooking of mushrooms cut this way might create different textures. Thanks for the master class.
