I used to work for Eric at his restaurant in Toronto. His food is amazing. Always went home with a dish after every shift yum. To top it off he is a gentle kind man, a great person to work with!

Eric impressed me because he always learns from his mistakes. When he made the Dungeness crab curry he used lime wedges which overpowered the crab. In his final lobster chow mien he used lime segments instead to add the acidity without overpowering the lobster

There are three epic moments of Eric from season 1 to me. The first is he faced harsh criticism toward Alvin in audition. That settled his attitude, made him really humble and learned from competition. The second is Marida did not play her advantage logically in the semi-final. Most successes need lucky. He received Dungeness crab, what he's familiar with. The third is at finale, after tasting his entree, Claudio reviewed how he evolved from start to end, how far he achieved on this journey.

I like how even though Joe only comes in for that one episode he made the pasta, he still manages to try and made Eric of all people feel like he produced a dish that isn't worthy of Joe's palette. Instead of actually talking about the dish, he once again tries to give the competitors open ended questions, where no matter what answer they give, he has a rebutle so he has the upper hand at all times in any conversation or discussion. Never liked Joe. I fondly remember that one episode even Gordon ramsey, arguably one of the greatest chefs of all time, tells Joe that his opinion is invalid and he is off his head when they were talking about a certain dish they tasted. Yet Joe still felt that his opinion on the dish was more important and valid than someone who is a Michelin star chef.

Baked Alaska part is on point for me lol. “Hate dessert. Never had one of these” . The feels lol. Same! Not sure if it’s an all Asian thing or just chinese, but I find that most of my Asian friends including my self rarely indulge in desserts until recently when a ton of dessert shop starts popping up everywhere in Chinatown. Especially boba desserts.

There's studies showed that Asians are at higher risk of developing type 2 diabetes even at a lower BMI, probably related to high amount of carbs in Asian diet, I guess when you get enough sugar from your carbs, you will instinctively reject sweets and desserts. Annnd tbh there's not many good dessert dishes in Asian cooking, Japanese wagashi maybe an exemption, but it is meant to go with matcha, which is a must in my opinion, once had a large cup of matcha without anything, knocked me into hypoglycemia.

Desserts for me only appear when there's birthday parties.. if it's just a normal meal, the closest dessert we will get is either Peanut Chocolate or leftovers from the party(which cannot last long as it's also eaten as a snack lmao)

Dessert for me are fruits with probably just a bar of chocolate. A full on dessert are usually on special ocassions and celebrations. Guess its just mainly cultural thing since us asians are more accustomed to savory dishes.

@@lkmusc same for me. Every meal, fruit is considered a dessert for me. But like you said, big dessert meals are usually during a party or big occasional only. Coming from Asian background I am not allowed to eat sweets and in general due to some health issues. So my diet is very restricted.

Thats what having a farther who never shows approval for what you do will do to you. Constantly worried for the next criticism and then is relieved when you get praise. (I don't know for sure but based off of the look on the fathers face and the fact that Eric said he was forced into engineering this would be my assumption)
