I really appreciate this video! I just bought a Marcato ravioli press/mold exactly like the one you use in the video. Really good tips! I figured out not to bother pressing down the filling areas as my filling was piped in and filling it to the top sufficed. Just need to ensure you have overhang of dough. Turned out great! Thank you so much!!

Thank you for the video :-) My try is identical to yours but it came in 2 pieces, so there is no need to make indentations, as the second tray (placed above the dough and pressed). Less fiddley in my opinion.
