Makes approximately 20 - 24 cookies - double recipe as needed.
Ingredients:
For Dough:
1 1/2 cups all-purpose flour [180 g]
1 tsp baking powder [4 g]
1/2 tsp salt [2.8 g]
1 tbsp + 2 tsp matcha green tea powder [10 g]
1/4 cup (4 tbsp) unsalted butter (softened) [56.8 g]
1/2 cup white granulated sugar [100 g]
2 large eggs [100 g]
2 tsp vanilla extract [10 mL]
1/8 cup white chocolate chips [22 g] (optional)
For Rolling:
3 tbsp granulated sugar [37.5 g]
1/3 cup powdered sugar [40 g]

These look great! I’ll be waiting for a red velvet version to bake as christmas gifts! Also I would like to make these way in advanced and was wondering if these can be shaped before hand and stored in the freezer, and baked from frozen?

Hello - thanks for your comment! I’ll add red velvet crinkles to my list of recipes to research and make a video. Yes, you can make these months ahead of advance and just freeze the shaped dough. Just take them out of freezer, roll in granulated sugar then powdered sugar (like in video), and bake. I’d suggest adding an extra 2 min to baking time. Hope this helps! 😊

Hi Juvy - unfortunately, making ube halaya from scratch requires fresh ube. I've searched for fresh ube here in NYC, but sadly I'm not able to find any. That's why I use the ube halaya from a jar (bought at a Filipino grocery store). Or you can also use ube powder, and reconstitute it with hot water (as per packet instructions) to make an ube paste. If I ever discovery fresh ube here in NYC, I'll definitely make an ube halaya video. Hope this helps! :)
