The Mathur Zaika is back with another lip-smacking recipe from the crowded streets of Mathura! My family's favourite - Kachori Aloo.

INGREDIENTS
For Kachori
Maida 500gms
Sooji 2tbsp
Refined oil 4 tbsp
Salt ½ tspn
Oil for frying
For pithi (kachori filling)
Urad dal 100gm (soaked for 4-5 hours in water)
Hing 1 tbsp
Saunf 2 tsp (grounded)
Coriander powder 2 tsp
Cooking soda ¾ tsp
Chili powder 1 tsp
Salt ¾ tsp
Fresh coriander 1 tsp (chopped)
For Aloo saag
Boiled potatoes 500gms (peeled and coarsely mashed)
Jeera 1 tsp
Methi seeds ½ tsp
Fresh coriander 2 tsp (chopped)
Black peppercorn 6 nos
Cloves 6 nos
Haldi powder 1 tsp
Coriander powder 1 tsp
Whole red chili 2 nos
Amchur powder 1 ½ tsp
Hing powder 1 tsp
Besan 2 tbsp
Chat masala 1 tsp
Kasoori methi 1 tsp
Mustard oil 4 tbsp
Ginger 1 tbsp (finely chopped)
Green chilli 1 tsp (chopped)
