I made dojo nabe at home with sliced catfish as dojo is hard to find. I also had some sake aged in cedar casks, and warmed it with matsutake mushrooms like you show here. It was all super good. I poached the catfish in miso, then finished in warashita sauce with green onions. The miso I then turned into matsutake miso soup. The flavor was exquisite, one of the best things I ever made. Matsutake mushrooms ( at least the variety we can get in the US ) remind me a lot of crimini mushrooms, only more powerful. Strong earthy scent with pine needle overtones.
