Corie looks so beautiful right now and so much more obviously pregnant. She has that glow that Katie had just before Ira was born. We called it wilted lettuce and I seem to remember a fried egg being dumped on each serving. I could be wrong. I like that Austin knows where the plates are in the cabinet and just goes for it. It's obvious he's not just an "in law"!

My grandmother called it Fried Salad. She was born in 1911. I think a lot of Appalachian cooking is really an old-style American cooking that Appalachia has kept alive. My grandmother was born and raised in Richmond, Virginia. She made it with salt pork, white vinegar and sugar. It was real treat. Warm and crunchy.

Happy belated birthday Matt! There isn't anything so sweet as the sound of a baby in the house is there!? Looking so forward for Baby Graddick to make his debut to the world next month! I know all of you are so relieved to sleep in your own beds again, specially Granny. Hospitals are so noisy all day and night, what with nurses in and out taking blood pressure and what not while you're trying to get some sleep! That is one delicious looking birthday supper! I'm in Iowa and we always call that wilted lettuce. Leafy lettuce, thinly sliced red onion, crumbled crispy bacon then pour the hot dressing of bacon fat, vinegar, pinch of sugar, salt, and peppper right over the top. So delicious!! Happy Birthday Matt!

As a child, maybe 5 or 6 years old, I would get a salt shaker and a wet washcloth and go to the garden. I would pick a cucumber, tomato, pepper or whatever and wash the dirt off them with the washcloth and just sit in the row and eat raw veggies. My Mommie soon found out if she couldn't find me at supper time, she would always check the garden first and there I would be. Sometimes I would get in trouble for that but, most times I wouldn't. Loved doing that and still do. Lettuce, Onions with hot bacon grease and cornbread is one of my favorites. Continued healing prayers for Granny. I've missed you a lot Miss Tipper. My grandmother from mid Alabama was a great cook and I think called it wilt lettuce. Maybe kilt I was 6 to 8 years old when I helped her in the kitchen 1966. It was great and memories flooded back. I'm gonna make some for myself soon as I'm 64 now. Been 60 years. She passed way to early in 1972. She was sawing boards for a project with a hand saw and had a heart attack. Still miss her to this day. Happy birthday and God Bless. I still pray for Granny.

I like red Cabbage in my salad ! Growing up we had boiled dinners . Cabbage rutabaga n carrots with side meat or hambone . Seems like we had two kinds of beans some days ! Always cornbread or leftover biscuits from early morning if daddy was working late shift ! Got too hot at noonday in summer to heat up the kitchen!

I'm in my late 70's now, living happily in France and having worked as a university professor all over the world but there's always that heartstring tug when I see your life and the importance of growing and eating your own food and sharing it with your family.
