Mathenga pulinkari( red pumpkin in tamarind sauce) kerala style ,is a very simple easy to make and goes well with rice Kerala style pumpkin curry, a simple and delicious vegetarian curry in which diced pumpkin pieces are cooked in Indian spices and tamarind sauce.You can even prepare this curry by adding roasted coconut here i use without coconut This is also a no onion, no garlic recipe.The pumpkin pieces in the pulinkari tastes simply delicious when had as a side dish with curd rice. it taste tangy from the tamarind and also with a hint of heat from the spice paste and natural sweetness of their own use coconut oil to temper for authentic taste.
most people do not include this vegetable in thier daily food but when pumpkin is combined with tamarind it gives an excellent taste, which everyone likes . the sweetness of the pumpkin , tanginess from tamerind and the spices added perfectly compliment each other . pumpkin tamarind curry also called mathanga curry mostly made in kerala
