Thank you for moka pot videos! For Bialetti Venus 2 cups I use water room temperature, distributed as follows: - into bottom chamber (boiler) -> 90 ml; - into upper chamber (coffee collector) -> 60 ml. I use medium roasted coffee of granularity a little less than finest pour-over. I stop brewing when a little ring of foam builds around the pipe.

Fascinating. I’ve had a 6-cup Express for 4 years now, it’s how I got into specialty coffee. I’ve thought of getting a Venus because I currently use induction, with a plate and I figured a stainless moka would be easier to clean: put it in the dishwasher and I wouldn’t have to faff around with the steel plate. But since I’m a light roast guy, I think I’ll stick with my Express. Thanks Mateo!

A manual grinder guide and comparison will be a cool topic for a video from the coffee scientist.

@Royalbob1237 күн бұрын

@matteofromtheswamps7 күн бұрын
Because increases the resistance inside the pot, so the water gain a bit more pressure that helps to extract more without grinding your coffee coarser. It's a good trick. You will also have better filtration but lose a bit of mouthfeel. Always good to try

The interesting thing is that if you look on the 2 cup venus box on the front it says 85ml and moka express says 90ml… I gotta say I have been trying to use 85ml (in the venus) with a dark roast and i gotta say i feel like this might help achieve a slightly higher temperature and thus create a slightly better extraction
@BusyAngel99998 күн бұрын
How much coffee do you grind? Or put in?
@MatMediaTV8 күн бұрын
@BusyAngel9999 12g but I probably grind finer than what you would usually grind for moka close to espresso but still too coarse for espresso. I did try an espresso grind size and then I can fit 14g max but the pressure gets too high and the safety valve just slightly opens to release some steam which isn't the main problem... The main issue with grinding finer is that the pressure is too high and at the end of extraction the water gets way too hot and over extracts the coffee real fast. You do get a slightly thicker and creamier coffee but just slightly even if you do get the extraction just right. So I'd just stick to any grind size that gets the right water temp in your opinion for the coffee you have. The finer grinds give higher temps but you should also put more coffee to compensate for a higher extraction of a hotter water. So really the range of a moka I very very large... Here in the video Matteo uses 11g but in my testing you could potentially fit up to 14g depending on what coffee you use and the grinder you have. But I would still stay away from grinding as fine as possible. If the pressure valve opens even slightly I'd coarsen the grind just in case.

Actually is more than 10 times Aluminium is 237 W m−1 K−1 and stainless steel 18/10 is 15 W m−1 K−1. But also you need to count the fact the the thermal stability of aluminium is lower than steel. Radiate heat faster than steel

Brikka is a bit different to honest because it has that pressure valve on top that change the dynamic. Higher pressure inside the moka. More water left in the boiler of the Venus translates to less sediment ending up in the cup, which explains the taste difference between the two. Proper Mocha Pot technique actually includes removing the Pot from the heat as soon as the water begins to spit out of the opening. This results in less sediment and a better tasting result. Some people even run the boiler under cold water to stop the boiling, but I find that by carefully timing the removal from heat it's not necessary.
@matteofromtheswamps8 күн бұрын
ok, that is not correct. You can have more sediment even with less water. It mainly depends on how you place the coffee in the basket. coffee puck in the moka as it happens for espresso, it's self filtrating, so when it's well packed reduce the chances to have sediments in the cup. I already made a video about that here on the channel. Here I'm not talking about sediments, I'm talking about different kind of extraction that I explain right after. About the removing the moka pot from the stove, yes, good, but when you make a good moka pot the coffee never spits
