What about stopping the brewing process immediately after sputtering. Its one of the most important steps to consider.

I did NOT expect the huge impact of using room temperature water in my 3 cup moka with slightly dark roast coffee. The result is hugely different from starting with 90 or so degree water. The coffee is slightly more full bodied, but the taste now finally does justice at the great coffee quality and sweeter with the correct sourness and bitterness. Thanks Matteo!

Hey Matteo! I´m a huge Big Boy fan, I use mine daily since February 2024. My own recipe is slightly different from yours: dose: 40g water: 670 ratio 1:16.75 grind size: 150 to 300 micron max. (10 - 20 C40 RX35 clicks) water temp.: 95-99°C depending on the coffee Bloom 70g + 2 pours (300g each). TBT; 3:30 to 04:00 min.

Quick question, I recently started using a moka pot, and even tho it works, after brewing, some of the coffee grounds leak into the coffee chamber. Is there something I can do to avoid this? Not sure if it has to do with the hear, the grinding of the coffee or general preparations like maybe not padding down the coffee or something. Any tips or suggestions? I don´t want to filter my coffee after it´s supposed to be ready

I loved this technique of taking the pot out of the heat and puting it back once the flow stops. I had a bialetti for some time, and I never managed to get a full extraction, because it always ended up with a lot of water still in the boiling chamber. This fixed my coffee. Thank you!

Hi, not with the Fellow Stagg EKG. The bottom is in plastic that isolate the heat, then the body it's made of stainless steel, and that is hot.

The 6 cup is our daily driver but I used my tiny one just yesterday. It is a different brew for sure - as you say. It seemed extra good yesterday. Mine was my great grandmother’s. It has a convex screen with it. I have to pack it a bit more gently to compensate for its tamping effect. Great vid! Great advice! Thank you!

I am a long time subscriber. Have you ever tried placing your Moka pot in a small pot of boiling water instead of directly on the heat source? My friend’s wife does this and the coffee never overheats.

Hi! First of all thanks for your support. I really appreciate it. Second, no I've never tried. That is an interesting approach. I'm actually not afraid of that because by keeping the low heat the coffee never gets overheat. There is the water in the boiler that regulates the heat in the moka. But that will be definitely something to try. Thank you so much for sharing this with me. :)

ciao matteo. video molto interessante. ho la malattia per l'espresso da un paio d'anni e di solito lo faccio a casa con una flair 58 . ho da poco comprato anche un tostino semiprofessionale per potermi tostare i miei caffe da solo. in ogni caso con i tuoi video mi hai fatto venir voglia di una bella moka , se ti va di collaborare ,sono bravo a progettare in 3d ed un paio di stampanti a casa , posso realizzare secondo tue direttive un dosatore che si adatti alla moka.

I think your grinder is the limit in brewing food coffee. Get a 1zpresso zp6 or pietro and you'll get a totally different extraction with stofdoek draw down time because of the low amount of fine. With this breville grinder you also can't create a consistent nice coffee with a v60, aeropress or whatever...ditch the grinder. 😊

The "too hot" is a common problem. I have an induction cooktop and managed to find an induction suitable moka pot. I get the best results by keeping the power output of a 1200 W sector dow to around 30% output. This removes the spluttering/gurgling sound and the coffee gently rises up through the siphon.

At around time 3:35 there is a mention that the water level should be at 1cm below the safety valve. I think what was meant was 1mm below the safety valve. As they say an image is worth one thousand words, so I think the visuals are pretty clear about what should be the level below the safety valve. Other than this nit pick about length units I think it is a great step by step video and I have seen other great videos from Matteo D'Ottavio. Have been using Moka pots for years. Always good to see what other people do.

Ciao, 130 ml é la quantitá di caffé liquido in uscita. Con 150 intendo la quantitá di acqua massima che si puo mettere nella caldaia.

I have been using Lavazza's 'arabic espresso' ground coffee in the mornings when I make mine. Is it possible to achieve this from pre-grounded coffee bags? Or is it always best to do it yourself?

The problem of already pre ground coffee is that first, you cannot control grind size and second the freshness decreases faster. Try to make it with my suggestions, then, if you find it too coarse because it’s coming out too fast, place a second paper filter and see if it makes it stronger. Otherwise you can tap the coffee in the basket a bit more to pack it better

I know, but you know quality doesn’t come cheap most of the times. If you use the normal Bialetti filter I suggest placing a paper filter to get better coffee

Hi, have been getting back to my Moka pot 2 cup, I think it makes a juicier coffee than espresso - but after hearing about this recipe, I want to try it - so how many clicks on Comandante for the two cup? Usually using 12 clicks for light roast.

The reality is that Moka doesn’t make crema. It’s not espresso. It doesn’t work with the same pressure. Moka is 1.5/2 bars, espresso is 9 bars. This pressure makes the crema. If you taste burnt also depends on the coffee you are using . The reduce burning , try my beginners method. You can find the video on my channels

So, yes it’s strong because more coffee you place with same amount of water, stronger gets the coffee. The right way depends on the coffee you brewing. For kimbo I would keep 16/120. If it’s too strong for you, add a bit of hot water after you made the coffee to reduce the strength, but in this way you keep the good extraction. If you place less ground coffee, the coffee will be too bitter

You're just adding a filter and using less water so it works like an espresso pot. You're not making moka coffee that rivals espresso. You're making espresso in a moka pot lol.

Love this! I ended up at a similar technique with my 6 cup moka pot after several months of experimentation. 30g of coffee grounds, 130 to 135g of water. AeroPress paper filter. Take off heat as soon as coffee comes through, let it pre-infuse 30 seconds, then finish slowly. It produces about 85g of coffee in the cup. Constraining the amount of water in the base allows me to precisely control the ratio, and going slowly especially at the end prevents the superheated sputtery blast. One mystery I haven't figured out yet is sometimes it's super foamy (a very thick foam) and sometimes it isn't.

Hi! Thanks for the comment. I like your technique! Thank you very much for sharing it with me. I know what you mean. That depends on how you place the coffee in the basket, When it's super foamy it means that the coffee puck made a good uniform resistance. if it's too liquid it means water found an easier way to come up. Automatically the coffee is weaker and not the right taste. The way to be come consistent is to control the way you place the coffee in the basket. Also the tapping on the counter to pack the coffee in the basket, in case you grind finer, needs to be gentle and not tap too much otherwise water flows from the side of the basket.

With my C40 grinder I always do this: Place the moka pot basket upside down on top of the bean jar after grinding the beans. They fit perfectly together. Then I shake it, as it seems to be the new meta. After shaking, I turn it upside down so all the grounds fall onto the basket. Then, just tap it a few times on the counter to settle the grounds.

Yep I do the same :). on the 3 cups, but not everybody has a Comandante, so I always need to share a general way to pack the coffee in the best way. But I agree with you method :)

la macinatura rende piu' fresca la miscela..... ma l'importante anche con quello gia' macinato non premere il caffe' nel filtro della moka....ma fare una piccola montagna e poi chiudere la caffettiera....oppure usate o coppetiello alla napoletana! il fuoco deve essere basso per farlo uscire cremoso quanto basta!
