That is a lot of grounds for one big cup. Usually one big spoon is enough. Most important. The mocca pot itself...you need to prime the metal by boiling it a few times in water with old coffee grounds and water. That is why buying an old second hand moccatiera is better. I like the moccatiera but for a nice, great emulsion, I still prefer the 3-5 minute french press method.😊😊

Hi, Matteo, I followed your advicessss, about changing to E&B filter, adding another auerpress filter, cold water to start, slow simmering heat and recording daily difference with slight weight change of water, etc. And Finally, my one serving moka pot is bubbling crema! The espresso looks syrupy, has a very strong fruity deep smell and tastes dense too. My next level of improvement, getting a good hand grinder. I am torn between, 1zpresso J-ultra, K-ultra and. of course the Comandante C40. What is your opinion? I see you use C40.

hi, nice video but in my opinion you are a bit confused about "water quality", initially "water quality" doesn't mean anything in particular, there are different qualities in water based on the work we have to do with it. hard water is not harmful to your health or to the moka, it just binds better with bitter components (to put it simply) and changes the flavor of the coffee (so it depends on your taste which is better), but when you use a quality arabica using filtered water does not mean using "better quality water" and even if it were bottled there are completely different characteristics between one and the other. Even today the interaction between the various fixed residues and the myriad of components inside the coffee is being studied, some even increase the sweetness and aroma (such as magnesium and other elements that I can't remember now). for example, it is thought that tea became popular in England thanks to their hard water. with this I just want to open a dialogue to delve deeper into a topic and it is absolutely not a criticism of the excellent video.

Yes, for the size I usually drink. For a 6 cups you need to put more coffee and more water because it's a 6 cups and not a 3 cups

Temperature of water in my opinion depends on the roasting level you use. lighter roast, hot water, dark roast, room temperature. Faster extraction in moka you actually get weaker coffee, so the opposite of espresso

I got this out of curiosity and completely wasted my money doing so! Lesson learned! I wanted it for going out walking to save on bulk but it’s such a faff and results in just warm, weak, gritty coffee. I now take open ended tea filter bags and put the coffee in those. Decent strength and hardly any sediment at the bottom.

The biggest problem is you do not control the temperature with the high quality termometer. Matteo, put the probe into the "chimney" and control the temperature (the best 90-96C) . Never use the aluminum moka pot, it is unhealthy (Alzheimer). Good video mate, thank you.

Hi Matteo, thanks a lot for this video. Changing hot for room temperature water really helped me get rid of the bitter taste and get a more sweet taste! I have one question: I start brewing with 120 grams of water and only get a yield of about 70 grams, you are getting 20 grams more with the same amount of water. I take the mokapot off of the stove once it starts sputtering. Is this due to the grind size or something else? (or is this normal?) Thanks again!

Glad to hear I helped. So the sputtering occurs when water boils in the boiler. It happens when coffee create too much resistance, so too fine grind size or when the heater is too high. A solution can be to remove the pot for a few seconds to let the water calm down and then place it back on the stove, you should then get a more regular flow until the end

It may be a scandalous thing to say, but I fill the pot with just boiled water - it really speeds the whole process up! Obviously you would need to wrap something like a tea towel round the base when adding the top to it as the base is scolding hot!

no that is not scandalous. I do the same. I sometimes use hot water depending on the coffee I'm brewing, usually a lighter roasted coffee. If you brew dark roast coffee I suggest less water inside and at room temperature to make it more balanced

Hi! Thanks for the comment, I'm glad you enjoyed the video! Great question-keeping coffee in the fridge might seem like a good idea, but it can actually do more harm than good. Coffee is very porous and easily absorbs moisture and odours from the fridge, which can negatively affect its flavour. Also, the constant temperature changes when taking it in and out can cause condensation, leading to stale coffee faster. It's best to store coffee in an airtight container in a cool, dark place. Hope this helps!
