I watched Max's video by chance and immediately I thought that Oh God! this man is so decent, energetic and handsome. I really love the way he appreciates every dish and immerses himself in the flavour. I have never seen a guy who is so into Vietnamese food like Max except for Anthony Bourdain. Hi Max! I’ve been watching your videos in Vietnam for a while. I especially like this one (I like them all), because: a. It shows how much experience you have with the food, to be able to know what questions/comments to make (e.g. eggs/jowl), b. The owner is confident and making the food her own, in a realm where traditions can be hard to push against. The way she/you/Bao described the food sounds as though she’s got everything within her to have a fruitful future with her work ethic and “fusion” food - - without gimmicks
